3 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
1 cup margarine or butter
2 eggs
1 1/2 cups sugar
1 teaspoon vanilla
1/2 teaspoon lemon extract

Steps:

  • In large bowl, combine flour, baking powder, baking soda and salt; mix well. Using fork or pastry blender, cut in 1 cup margarine until mixture is crumbly. In small bowl, beat eggs. Gradually add sugar, 1 teaspoon vanilla and lemon extract, beating until light. Add to flour mixture in large bowl. Stir by hand until dough forms. (If necessary, knead dough with hands to mix in dry ingredients.) Cover with plastic wrap; refrigerate 1 hour for easier handling.
  • Heat oven to 375°F. On lightly floured surface, roll out 1/3 of dough at a time to 1/8-inch thickness. (Keep remaining dough refrigerated.) Cut with 2 1/2 to 3-inch floured cookie cutters. Place 1 inch apart on ungreased cookie sheets. If desired, decorate with decorator sugar or multicolored candy sprinkles.
  • Bake at 375°F. for 6 to 11 minutes or until edges are light golden brown. Immediately remove from cookie sheets. Cool 15 minutes or until completely cooled.

Steps:

  • Heat oven to 350°F. In large bowl, stir all ingredients except colored sugar with spoon until dough forms.
  • Shape dough by teaspoonfuls into balls. On ungreased cookie sheets, place balls 2 inches apart. Flatten with bottom of glass dipped in colored sugar.
  • Bake 9 to 11 minutes or until set. Cool 2 minutes; carefully remove from cookie sheets to cooling racks.

  • 1.      Preheat the oven to 350°F (180°C). Line two cookies sheets with parchment paper; set aside. 2.      In a medium mixing bowl, cream shortening, sugar, vanilla, and egg. Stir in milk. 3.      In a separate bowl, mix the flour, baking powder, salt, and xanthan gum. 4.      Gradually add the flour mixture to the wet ingredients, mixing until combined. Using hands, roll dough into one big ball and place between two large pieces of parchment paper. 5.      Using a rolling pin, roll dough out until ½ inch in thickness. 6.      Using cookie cutters to cut out shapes. Gently remove the extra dough around the cookies, and transfer the cookies to a parchment lined baking sheet. 7.      Gather remaining dough into a ball, and repeat until all dough is used. 8.      Bake for 8-10 minutes, or until the centers are set. 9.      Remove from the oven and let cool for 5 minutes. Transfer to a wire rack until completely cool. 10.  To make frosting, in a medium mixing bowl, cream butter and vanilla until smooth. Gradually add powdered sugar. Alternate one cup of powdered sugar with one tablespoon dairy-free milk until all ingredients are combined. Beat in additional dairy-free milk if needed to obtain desired consistency. 11.  If desired, divide frosting into bowls and add food coloring. 12.  Frost and decorate cookies. 13.  Store in an airtight container at room temperature for up to 4 days.
