2 cups mixed salad greens
½ cup sliced cucumber
2 tablespoons grated carrot
1?½ teaspoons extra-virgin olive oil
1?½ teaspoons balsamic vinegar
Pinch of salt
Pinch of ground pepper
1 6 1/2-inch whole-wheat pita bread, toasted
¼ cup hummus

Steps:

  • Arrange greens, cucumber and carrot on a large plate. Drizzle with oil and vinegar. Sprinkle with salt and pepper. Serve with pita and hummus.

Step-by-Step Guide to Cook Speedy Hummus and pita bread

hummus
200 grams chickpeas
2 garlic cloves
2 tbsp lemon juice
2 tbsp olive oil
4 tbsp water
1 tsp ground cumin
100 ml tahini
1 salt and black pepper to taste
pita bread
300 ml warm water
500 grams plain flour
1 tsp active dry yeast
6 tbsp olive oil, extra virgin
1 tsp salt

Steps:

  • Hummus. Just put all the ingredients in a food procesor and its done, if you dont have a food procesor you can use a blender too, just add all the liquids first and then the chickpeas.
  • Mix the dried yeast into the warm water and set to one side.Put the flour into a bowl, add the salt then mix in the yeasty solution. Add the olive oil and knead it all together until it is smooth and firm. Leave it to rise for half an hour.
  • Once it's risen, cut the dough into 8, shape into balls and roll out on both sides. You need your oven at the hottest it will go – 240°C/gas mark 9, or higher if you can.Put the pittas onto a preheated heavy metal baking tray or a baking stone and pit them into the hot oven until they blister up - it will be around 2 minutes. Any longer and they'll start to burn.
  • Yo can serve this with fresh vegetables, meat, et cetera and enjoy!

These are inexpensive, easy, quick to put together and can be served room temp or right out of the oven. Cut into wedges like small pizza slices. They never last long and you can really use any toppings. I like to make my own hummus, but it isn't difficult if you want to make your own. But I get a small container which is enough for about 8 pitas for under $3, a roasted red pepper hummus right from the grocery store so why not. Then my favorite toppings are black or kalamata olives, goat or feta cheese, carmelized onions, fresh basil, fresh baby spinach, diced tomato or sundried tomatoes. You can add anything. Just lightly toast in the oven top, cook again for just 5 minutes and done! Slice like a pizza and serve. Great easy treats.
