Pan Fried Okra Recipe : Taste of Southern image

Pan Fried Okra without breading is an easy way to enjoy fresh okra. A little bacon grease added to your cooking oil will increase the flavor.

Total Time 25 minutes

Prep Time 15 minutes

Cook Time 10 minutes

Yield 2

Number Of Ingredients 4

1 lb Fresh Okra
1 Tablespoon Bacon Grease for seasoning
Salt and Pepper to taste
Oil for frying

Steps:

  • Rinse the okra pods gently under cold running water, or wipe each with a damp paper towel.
  • Remove both ends from the okra pods. Discard the ends.
  • Slice each pod into pieces about 1 inch in length.
  • Place a skillet over Medium heat on your stove top.
  • When the pan is hot, add enough oil to coat bottom of pan.
  • Add the bacon grease.
  • Let the oil get hot, almost to the smoking point.
  • Add the cut okra.
  • Turn the okra often as it cooks to let it brown slightly.
  • Add the black pepper.
  • When okra is lightly browned, remove from pan, place on paper towel to drain.
  • Add the salt to taste.
  • Enjoy!

Some years ago, I was a cook on a large cattle ranch. One day, I thought back to the hush puppies I'd had as a child on a southern trip, and I ended up creating my own version of them. They go well as part of an old-fashioned fried chicken dinner with mashed potatoes and gravy, buttermilk biscuits, corn on the cob and watermelon pickles! —Karyl Goodhart, Geraldine, Montana

Number Of Ingredients 10

2 cups yellow cornmeal
1/2 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
3/4 cup cream-style corn
Oil for deep-fat frying

Steps:

  • In a large bowl, whisk cornmeal, flour, sugar, baking powder, salt and baking soda. Add egg, milk and corn; stir just until combined. , In a deep-fat fryer, heat oil to 375°. Drop tablespoons of batter, a few at a time, into hot oil. Fry until golden brown on both sides. Drain on paper towels. Serve warm.
