240 ml double cream
125 g gruyere cheese, finely grated
nutmeg, ground
pepper, ground

Steps:

  • Pre-heat the oven to 190° C (375° F - gas 5)
  • Grease 4 ramekins well and place in a baking dish or roasting tin, to which sufficient hot water has been added to come up half way up the sides of the ramekins.
  • Carefully crack 2 eggs into each ramekin. Combine the cream & cheese; divide among the ramekins. Sprinkle a pinch each of nutmeg & pepper onto each serving.
  • Bake for about 6 minutes until the mixture is just set.

4 cooked potatoes
2 tablespoons butter
200 grams ham
4 eggs
salt
freshly ground peppers
butter (for the pan)
4 slices Country bread
1 garlic
olive oil

Steps:

  • Slice potatoes and fry on all sides in a large pan in hot butter.
  • Grease 4 glass ramekins with butter. Preheat the oven to 220°C (approximately 425°F).
  • Cut ham into strips, add to the pan with potatoes, fry while stirring and season with salt and pepper.
  • Distribute potatoes and ham to the ramekins. Beat each egg individually in a bowl, pour each over ramekin and bake in the preheated oven for 8-10 minutes.
  • Toast bread, rub with garlic and drizzle with olive oil.
  • Serve ramekins with bread.
