1 (12 ounce) package vanilla wafers
2 (8 ounce) packages cream cheese
¾ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.
  • Crush the vanilla wafers and place 1/2 tablespoon of the crushed vanilla wafers into the paper lined miniature muffin tins.
  • Cream together with an electric mixer the cream cheese, sugar, eggs and vanilla. Fill each miniature muffin liner with this mixture, almost to the top.
  • Bake at 350 degrees F (175 degrees C) for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavor) pie filling.

1½ cups all-purpose flour
3/4 tsp baking powder
½ tsp kosher salt
½ cup room temperature unsalted butter
½ cup confectioners' sugar
1/4 cup granulated sugar
1 room temperature large egg
1 tbsp vanilla extract
1 tbsp whole milk

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In the bowl of a stand mixer, cream together butter, confectioners' sugar, and granulated sugar on medium speed for at least 2 minutes, scraping down the sides as needed.
  • Add the egg, vanilla, and milk and blend until smooth and fluffy for about 30 seconds.
  • Add the flour mixture and mix on low until fully incorporated.
  • Chill the batter for 10 to 15 minutes.
  • Scoop ½ teaspoon-sized dollops of the batter, about 1-inch apart, onto a baking sheet lined with parchment.
  • Bake 12 to 15 minutes, rotating halfway through baking. The cookies will be golden brown.
  • Allow to cool completely before serving. Enjoy!
