Adobong Kangkong(Water Spinach) – My Asian Recipe image

This Adobong Kangkong Recipe is a vegetable-based variant of the popular Filipino dish Adobo. The Adobong Kangkong Recipe, like the Pork Adobo and Adobo Flakes, is created with soy sauce and vinegar, as well as onions, garlic, and bay leaf.

1 bunch kangkong
1 tablespoon oil
1 small onion peeled and sliced thinly
6 to 7 cloves garlic peeled and minced
1/2 pound pork belly cut into 1/4 inch thick strips
1/2 cup vinegar
1/4 cup soy sauce
1/2 cup water
Black Pepper

Steps:

  • Remove around 2 inches of the kangkong stalks and throw them away. Separate the tougher stalks from the leaves before cutting kangkong into 3-inch pieces. Thoroughly clean and drain.
  • Heat the oil in a large skillet over high heat. Cook, stirring frequently until the onions and garlic are soft. Cook, tossing frequently until the pork is lightly browned.
  • Bring to a boil with the vinegar. Cook for another 2 to 3 minutes, stirring occasionally. Combine the soy sauce and water in a mixing bowl. Bring the water to a boil for 1 to 2 minutes. Lower the heat to low, cover, and cook for 8 to 10 minutes, or until the pork is tender and the sauce has reduced. To taste, season with pepper.
  • Turn up the heat to high. Add the kangkong stalks and simmer for 1 to 2 minutes, stirring often. Cook, tossing often, for another minute or until the kangkong leaves are just wilted and covered with sauce. Remove from heat and, if preferred, top with fried garlic bits. Serve immediately.

2 bundles kangkong
1 large clove garlic
1 1/2 tablespoons soy sauce
2 tablespoons sesame oil

Steps:

  • Stir-fry the chopped garlic in sesame oil. Season with a little soy sauce. Put in the kangking stalks first add little water and let it boil for 1-2 minutes. Add the leaves and cook for another 1-2 minutes. Pour the kangkong and serve.
