This has been around at least since the 60's and remains a hit at parties. Younger folks tend not to be familiar with it but love it. Use any flavor of RoTel tomatoes and green chiles you want, but I like the mild. The recipe comes from the label on the can of ROTEL.

Ingredients

1 lb Velveeta cheese
1 (10 ounce) can tomatoes and green chilies (Diced or Whole RO*TEL)

Steps:

Cut Velveeta Cheese into 1-inch cubes
In a saucepan, combine ingredients; stir over low heat until cheese spread is melted.
Serve with corn tortilla chips.
Microwave:
Place ingredients in a covered casserole.
Microwave on HIGH until Velveeta is melted, 3-5 minutes, stirring once.
Serve with corn tortilla chips.

Ingredients

1/4 cup margarine
1 medium green bell pepper, chopped
1 medium onion, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (10 ounce) can ro*tel diced tomatoes and green chilies
2 cups cubed cooked chicken
12 corn tortillas, torn into bite-sized pieces
2 cups shredded cheddar cheese

Steps:

Preheat oven to 325 degrees F. In a large saucepan, cook pepper and onion in melted margarine until tender, about 5 minutes.
Add soups, RO*TEL and chicken, stirring until well blended.
In a 13 x 9 x 2-inch baking pan, alternately layer tortillas, soup mixture and cheese, repeating for three layers. Bake 40 minutes or until hot and bubbling. Serves 8.
