4 1/2 c. Avocados From Mexico, stage 4, mashed
1 1/2 c. cotija cheese, grated
3 c. cream cheese
1 1/2 c. queso fresco, crumbled
1 1/2 c. jalapeño, small diced
1 1/2 c. spiced tortilla chips, subrecipe
1 p. crudité, assorted
Spiced Chip Mix
1 q. tortilla chips, crushed
1 t. tajin
1 t. chili powder
1 t. cumin, ground
1 1/2 T. smoked paprika
1 t. salt, kosher

Steps:

  • In a stand mixer, whip avocado, cream cheese, cotija, and queso fresco until mixture is thoroughly combined. Gently fold in minced jalapeño.
  • Place in a 3.5 in mold and place into a freezer for 20 mins.
  • Take the jalapeño studded avo-cheese ball out of the mold. Gently roll the ball in a spiced tortilla chip crust.
  • Serve with an assortment of crudité.
  • Spiced Chip Mix: Toss chips in a small amount of oil. Toss lightly oiled chips in seasoning until completely covered. Reserve at room temperature until ready to use.

1 can (8 oz) refrigerated Pillsbury™ Original Crescent Dough Sheet or 1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
1 container (8 oz) guacamole (1 cup)
4 crisply cooked bacon strips

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray.
  • Unroll dough on work surface. Press into 12x9-inch rectangle. If using crescent roll dough, firmly press perforations to seal. With pizza cutter or sharp knife, cut into 6 rows by 4 rows to make 24 squares.
  • Gently press squares into muffin cups (dough will not completely cover inside of cup; do not press too much). Bake 6 to 8 minutes or until edges are golden brown. Cool in pans 10 minutes. Remove from pans. Cool completely, about 10 minutes.
  • Spoon 1 teaspoon guacamole into each cup.
  • Cut each bacon strip into 6 pieces. Place 1 bacon piece on each guacamole-filled cup.
