11 oz creamy goat cheese
Zest from 1 large organic lemon
5 tbsp wild honey
2 tbsp dried cranberries + 1 tbsp dark chocolate covered Acai + 1 tbsp lemon balm leaves
2 tbsp edible flower petals + 1 tbsp lemon thyme leaves
2 tbsp toasted walnuts (roughly chopped)
2 tbsp dried cranberrie + 2 tbsp slated pistachios
1 tbsp poppy seeds + 1 tsp lemon zest
1 tbsp ground walnuts + 1 tbsp ground poppy
1/4 c extra virgin olive oil
2 tbsp fresh chives +chive blossoms
1 tbsp cracked peppercorns + 1/4 tsp coarse sea salt + lemon zest
1 tbsp sun dried tomatoes + basil blossoms
1 tbsp toasted pine nuts + 1 tbsp fresh basil chiffonade
1 tbsp caraway seeds + 1 tbsp fresh dill + 1 tbsp dill blossoms

Steps:

  • Cut the goat cheese into 11 thin logs. Depending on the size of your initial log you'll want to cut it lengthwise and crosswise to make 11 thin goat cheese logs.
  • Transfer each log to a sheet of parchment paper and roll it to create a round log as the initial one only smaller and skinnier.
  • Drizzle the honey on a plate or cutting board and roll the goat cheese logs in it, except the ones you want to coat in a savory mix, like the chives.
  • Spread all your toppings in different piles on another plate.
  • Take each goat cheese log coated in honey and roll it in any of your sweet toppings, using your fingers to gently pat on the mixture and make sure it sticks to the goat cheese. Garnish with the fresh lemon balm or mint and transfer to a cheese board and refrigerate covered with plastic wrap until ready to serve.
  • Repeat the above process with the savory toppings, only this time you will coat the goat cheese log in the olive oil first. Transfer to the cheese board and refrigerate covered with plastic wrap until ready to serve.
  • Grate the lemon zest over the cheese board just before serving.

1, baguette (crusty French bread)
2-3 Tbsp olive oil
8oz plain goat cheese
4oz whipped cream cheese
1/4 tsp salt
1 Tbsp fresh thyme leaves
1.5 C homemade cranberry sauce

Steps:

  • Preheat your oven to 450°F.
  • Slice your baguette into even slices no bigger than ½” thick and brush each side with olive oil.
  • Place brushed slices onto a baking sheet and bake for 6-9 minutes until toasted.*
  • Remove from the oven and allow to cool before adding the toppings (at least 5 minutes).
  • While your crostini is toasting, make the whipped goat cheese with thyme by placing the goat cheese, cream cheese, salt, and thyme leaves into a food processor (or high power blender) and process until combined. Scrape down the sides of your food processor with a rubber scraper part way through to ensure all ingredients are getting incorporated.
  • Spread an even layer of the whipped goat cheese mixture onto each cooled crostini toast.
  • Top with a spoonful of homemade cranberry sauce and gently spread it across the goat cheese layer.
  • Add a little sprig of fresh thyme, or additional thyme leaves, for garnish if desired.
  • Place assembled crostini on a serving platter, eat, and enjoy!
