This easy flower cupcake recipe is perfect for baby and bridal showers, spring celebrations, and other family get-togethers. Just look at those cute petals!

batch Vanilla Buttercream

Natural food coloring powder (we like Color Kitchen) or gel paste food coloring

Cornstarch, for dusting

White or pink fondant

Steps:

  • Heat oven to 350°F. Line a 12-cup muffin pan with paper liners. In medium bowl, whisk together flour, baking powder, and salt.  In bowl of electric mixer, beat granulated sugar and butter on medium-high speed until light and fluffy, about 3 minutes. Reduce mixer speed to medium and add eggs 1 at a time, beating each until incorporated before adding the next. Beat in vanilla.  Reduce mixer speed to low and add flour mixture in three parts, alternating with milk and beating just until incorporated.  Divide batter among muffin-pan cups (about 1/4 cup each) and bake until a wooden pick inserted in center of each cupcake comes out clean, 18 to 22 minutes. Transfer to wire rack and let cool. Tint buttercream desired colors. Fit pastry bag with large star tip and fill with colored buttercream. Frost cupcakes, then decorate with flowers.

1 package white cake mix
1 c. boiling water
1 package Jell-O® Strawberry Flavor Gelatin
1 tub Cool Whip® Whipped Topping
Green, yellow, and red food coloring
Jet-Puffed® Marshmallows
colored sugar
Small hard candies
Baker's® Angel Flake Coconut
Jet-Puffed® Bunny Mallows Marshmallows
NILLA Wafers
Jet-Puffed® Miniature Marshmallows

Steps:

  • Prepare cake batter and bake as directed on package for cupcakes. Cool in pans 10 minutes. Pierce tops with fork. Add boiling water to gelatin mix in small bowl; stir 2 minutes until completely dissolved. Spoon over cupcakes. Refrigerate 30 minutes. Tint Cool Whip® with food coloring; spread over cupcakes. Decorate as desired (see below). Keep refrigerated.

    Marshmallow flowers: For each flower, cut 1 large marshmallow into 5 slices; press cut sides in colored sugar. Arrange on cupcake to resemble flower. Add candy to center.

    Bunnies: Top cupcakes with tinted coconut and marshmallow bunnies.

    Nilla® flowers: For each flower, place 1 wafer on top of cupcake; surround with 10 miniature marshmallows.

    Tinting coconut: Mix 1/2 teaspoon water with a few drops of food coloring. Add to 1 cup Baker's® Angel Flake Coconut in resealable plastic bag; seal bag. Shake until coconut is evenly tinted. Use more food coloring for a darker shade and less coloring for a lighter shade.

  • Preheat oven to 350 degrees F. Line wells of 18 muffin cups with cupcake liners. In a bowl, whisk to combine flour, baking powder, and salt. Set aside. Beat butter and sugar in another bowl with a mixer on medium-high speed for 5 minutes, until light and fluffy, scraping down sides of the bowl as needed. Add vanilla and beat for 1 minute more. Add egg whites to butter mixture one at a time, beating like crazy after each addition to lighten batter and pausing to scrape down sides of the bowl. This should take about 5 minutes in all. Beat in flour mixture and coconut milk in alternating additions, starting and ending with flour mixture; do not overmix. Divide batter evenly among muffin cups. Bake for 25 minutes, or until a tester inserted in center of a cupcake comes out clean. Let cool. Place coconut flakes in a small bowl. Cut a cone-shaped piece of cake out of top of each cooled cupcake and drop a dollop of violet jam into well. Replace caps on the cupcakes. Top each with a generous dollop of buttercream, and dip in coconut flakes. Top cupcakes with candied violets and serve.
