What's good about it: Spinach is a vitamin powerhouse. Cottage cheese subs for sour cream, making the dip high in protein and low in fat. Serve with whole-grain baguette toasts.

Steps:
- Put spinach in a large microwave-safe bowl and drape bowl with microwave-safe plastic wrap. Microwave until spinach is tender, stirring a couple of times, 4 to 5 minutes. Drain spinach and let stand until cool enough to handle. Squeeze out liquid, then finely chop.
- Whirl cottage cheese, parmesan, salt, and pepper in a food processor until very smooth, about 1 minute, scraping inside of bowl as needed. Scrape into a bowl and stir in spinach. Serve dip at room temperature or chilled, with baguette toasts or crackers.
- Make ahead: Up to 2 days, chilled.

OLD FASHIONED DOUGHNUT CROQUEMBOUCHE | FOOD & WINE
Pastry chef Paola Velez's twist on a traditional croquembouche features homemade cinnamon doughnuts instead of cream puffs. The first step is to fry up a batch of the doughnut holes. They're then "glued" together with a simple caramel to form a cone-shaped tower. For the finishing touch, dip the tines of a fork into the hot caramel, and as the caramel drips from the tines, swipe the caramel back and forth over a work surface, then gather together and drape around the tower like a sash. The dessert can be assembled up to 10 hours ahead of time and placed on a table to make an impressive edible centerpiece. There will be some caramel "glue" left over; if desired, add butter and cream and turn it into a caramel sauce for ice cream.

- Preheat oven to 375° and line a large baking sheet with foil. In a large skillet over medium heat, add sausage and cook, breaking up the meat with a wooden spoon, until golden and cooked through, about 8 minutes. Turn heat to low and stir in Velveeta, cream cheese, sour cream, Worcestershire, onion powder, and ground sage. Stir until everything is melted and well-mixed, about 5 minutes, then remove from heat. Unroll crescent rolls, separating each triangle. Arrange rolls in a sunburst pattern, with pointed ends of the triangles facing outward. Spoon dip mixture onto the bottom of the crescents. Drape with Muenster slices, then fold triangle tips over filling and tuck under itself, forming a ring. Brush the dough with egg wash and sprinkle with chives. Bake until dough is golden and the cheese is melty, about 18-20 minutes.
