DEEP SOUTH DISH: BASIC GROUND BEEF AMERICAN GOULASH



Deep South Dish: Basic Ground Beef American Goulash image

A quick and easy ground beef, macaroni and tomato skillet meal. Stir in 1/2 cup of cubed Velveeta for a cheesy version.

Number Of Ingredients 13

1-1/2 pounds ground chuck
1-1/2 cups chopped onion
1 tablespoon minced garlic
1/2 tablespoon dried Italian seasoning
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly cracked black pepper, or to taste
1 teaspoon seasoned salt (like Lawry's), or to taste
1/2 teaspoon Cajun seasoning (like Slap Ya Mama), or to taste, optional
1-1/2 cups water or beef stock/broth
1 (14.5 ounce) can tomato sauce
1 (14.5 ounce) can diced tomatoes, undrained
2 small bay leaves
1-1/2 cups dry elbow macaroni

Steps:

  • Sauté the ground beef until cooked through; drain off excess fat, if needed.
  • Add the onion and garlic and continue sautéing about 5 minutes.
  • Add the Italian seasoning, salt, pepper, seasoned salt and Cajun seasoning; blend.
  • Add the water or beef broth and stir well, scraping the bottom of the pan. Add the tomato sauce, diced tomato and bay leaves, bring to a boil, reduce heat to simmer, cover and cook for 20 minutes, stirring occasionally.
  • Add the macaroni, stir, cover and continue to simmer for 15 to 20 minutes longer, or until pasta is cooked through, stirring occasionally.
  • Remove from heat, taste and adjust seasonings and let sit for 5 minutes. Remove bay leaves and serve.

A southern bread pudding using leftover French bread, a can of fruit and finished with a drizzle of whiskey sauce.

Number Of Ingredients 10

1/2 pound loaf of French bread
1 cup whole milk
1 cup half and half
2 large eggs
1 cup granulated sugar
1 tablespoon pure vanilla extract
1/2 cup golden raisins, optional
1 (15 ounce) can of fruit (fruit cocktail, peaches, pears, etc.), drained
2 tablespoons of unsalted butter
Whiskey Sauce (click here for recipe)

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together the milk and half and half. Tear the bread into small pieces and put into a large bowl for soaking. Pour the milk mixture all over the top. Let sit for about 10 minutes. Stir.
  • In a separate bowl, whisk the eggs with the sugar and vanilla until well blended.
  • Rough chop the fruit, but don't puree it.
  • Add the raisins and fruit to the egg mixture, pour over the bread and gently mix.
  • Butter a 9 x 9 inch baking dish and coat the dish all along the sides and bottom. Spoon the bread pudding mixture into the dish, but do not pack.
  • Bake uncovered at 350 degrees F for about 1 hour, or until bubbly on the sides, golden brown on top and set in the middle. Let cool for about 5 minutes before cutting into squares.
  • Drizzle each serving with whiskey sauce if desired. Doubles great.

    2. Squeeze the sausage meat out of the skins directly into the frying pan, with ½ a tablespoon of olive oil. Use a wooden spoon to roughly break up the meat.
    3. Add the oregano and fennel seeds, and stir-fry until the sausage meat is lightly golden.
    4. Peel and finely slice the onions then add to the pan with a pinch of sea salt and black pepper. Add the jalapeños and a splash of their vinegar. Cook on a medium heat for 5 to 10 minutes, or until the onions are soft and caramelised, stirring regularly.
    5. Meanwhile, for the dough, pile the flour into a bowl with a good pinch of sea salt. Add up to 250ml of water, mixing until it comes together as a smooth, elastic dough. You want it to be pliable.
    6. Knead the dough on a lightly floured surface for a couple of minutes, then form into a rough round.
    7. Now, tip your topping out of the pan for a moment, returning the pan to a medium heat. Place the dough in the pan and – being careful not to touch the hot pan – use your fingertips to stretch out the dough to cover the base.
    8. Spoon the topping back over the pizza, spreading it out and pushing the sausage into the dough, then grate over the cheese.
    9. Turn the heat back up to medium-high and cook for 3 to 5 minutes, or until the base has started to crisp up. Transfer to the oven for 10 minutes, or until golden, puffed up and sizzling. Serve with a nice salad, if you like.
