I have fried mushrooms. I have air-fried various mushrooms. These are hands down the crispiest and most flavorful fried mushrooms I have ever had. Serve with ranch dressing if desired.

4 ounces oyster mushrooms, trimmed
1 cup buttermilk
1?½ cups all-purpose flour
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon ground mustard
non-stick cooking spray
2 tablespoons vegetable oil

Steps:

  • Preheat an air fryer to 390 degrees F (200 degrees C).
  • Place oyster mushrooms in a bowl and pour buttermilk on top. Toss to coat mushrooms with buttermilk and marinate for 15 minutes.
  • Meanwhile, add flour, salt, pepper, garlic powder, onion powder, paprika, and ground mustard to a large resealable zip-top bag. Seal and shake until evenly combined.
  • One at a time, take a mushroom out of the buttermilk mixture and drop in the seasoned flour. Toss to coat and transfer to a plate. Once all mushrooms are coated, repeat the breading step until all mushrooms are breaded twice and set them on another plate.
  • Spray the basket of the air fryer with nonstick cooking spray. Spread out breaded mushrooms in the basket of the air fryer in one layer, making sure not to overcrowd (you will need to do this in batches).
  • Air-fry mushrooms for 4 minutes. Liberally brush mushrooms with vegetable oil and air-fry for 4 minutes more. Using tongs, flip the mushrooms over and cook 2 minutes more. Repeat with remaining mushrooms

Oyster mushrooms are tossed with seasonings, starch and egg, and deep fried. Mushroom fries are light and crisp, and outrageously good. Perfect snack or finger food to go with your cocktails.

500 grams fresh oyster mushrooms
1 teaspoon salt
½ teaspoon pepper
1 large egg
¾ to 1 cup corn starch
½ teaspoon baking powder
cooking oil (for deep frying)

Steps:

  • Tear large mushrooms vertically into two to three portions.
  • Place all the mushrooms in a large mixing bowl and toss with the salt and pepper.
  • In a small bowl, beat the egg then pour into the bowl with the mushrooms. Mix well to coat each piece of mushroom with egg.
  • Whisk together half of the starch with the baking powder and dump into the bowl with the egg-coated mushrooms.
  • Mix to distribute evenly. If the mixture appears too wet, you may add another quarter cup of starch. For a thicker coating, use all of the starch.
  • Heat the wok. Pour in enough cooking oil to reach a depth of at least three inches at the center.
  • When the oil reaches 350F, fry the oyster mushrooms in batches until golden and crisp.
  • Drain the cooked mushrooms on a rack, cook the next batch, and so on, until all the mushrooms have been fried.
  • Serve the crispy oyster mushrooms fries immediately with spicy mayo for dipping.
