1 cup butter, softened
1 cup packed brown sugar
½ cup white sugar
2 eggs
1 ½ teaspoons vanilla extract
1 tablespoon grated orange zest
1 teaspoon orange extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 cups rolled oats
1 cup dried cranberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla, orange zest and orange extract. Combine the flour, baking soda and cinnamon; stir into the butter mixture. Stir in the oats and cranberries. Drop by rounded tablespoonfuls onto ungreased cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, or until golden brown. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

With their ruby cranberries and glittering sugar edges, these cookies look labor-intensive. But they're actually a host's best friend — keep the dough in your fridge, and they can be baked and served in half an hour.

1 1/2 cups all-purpose flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
1/4 cup plus 2 tablespoons granulated sugar
1/2 teaspoon finely grated fresh orange zest
1/2 cup shelled pistachios (2 1/4 oz; not dyed red)
1/3 cup dried cranberries (1 1/4 oz)
1 large egg, lightly beaten
1/4 cup decorative sugar (preferably coarse)

Steps:

  • Stir together flour, cinnamon, and salt in a bowl.
  • Beat together butter, granulated sugar, and zest in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes. Reduce speed to low and add flour mixture in 3 batches, mixing until dough just comes together in clumps, then mix in pistachios and cranberries. Gather and press dough together, then divide into 2 equal pieces. Using a sheet of plastic wrap or wax paper as an aid, form each piece of dough into a log about 1 1/2 inches in diameter. Square off long sides of each log to form a bar, then chill, wrapped in plastic wrap, until very firm, at least 2 hours.
  • Put oven racks in upper and lower thirds of oven and preheat oven to 350°F. Line 2 large baking sheets with parchment paper.
  • Brush egg over all 4 long sides of bars (but not ends). Sprinkle decorative sugar on a separate sheet of parchment or wax paper and press bars into sugar, coating well.
  • Cut each bar crosswise into 1/4-inch-thick slices, rotating bar after cutting each slice to help keep square shape. (If dough gets too soft to slice, freeze bars briefly until firm.) Arrange cookies about 1/2 inch apart on lined baking sheets.
  • Bake cookies, switching position of sheets halfway through baking, until edges are pale golden, 15 to 18 minutes total. Transfer cookies from parchment to racks using a slotted spatula and cool completely.

  • 1. Make the Cranberry Curd: In a medium saucepan, combine the cranberries, orange zest and juice, sugar and salt. Bring to a simmer over medium-low heat, stirring occasionally, until the cranberries have popped and softened, 10 to 12 minutes. (If you're using frozen cranberries, cook until the liquid slightly reduced, 8 to 10 minutes.) 2. With a fine-mesh sieve set over a medium bowl, strain the cranberry mixture, pressing the sauce through with a rubber spatula. Discard the solids; whisk the butter into the warm liquid. 3. In a small bowl, whisk together the eggs and egg yolks. Slowly whisk about 1 cup of the warm cranberry mixture into the eggs to temper them (this prevents the eggs from scrambling), then return this mixture to the remaining cranberry liquid and whisk to combine. 4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the curd bubbles and thickens slightly, 8 to 10 minutes. Transfer to a medium bowl and cover with plastic wrap directly on the surface. The curd can be made up to 2 days ahead and stored in the refrigerator. When ready to use, transfer to a pastry bag or Ziploc bag with one corner snipped. 5. Make the Cookies: Preheat the oven to 350�F. Line two baking sheets with parchment paper. 6. In the bowl of a stand mixer fitted with the paddle attachment, mix the butter, sugar, salt, orange zest and vanilla on medium speed until creamy, about 3 minutes. Mix in the flour until a dough forms, starting on low speed and gradually increasing to medium. (In order to hold the thumbprint shape, the dough is stiff; you may need to knead it by hand a few times to bring it together.) 7. Using a small cookie scoop or your hands, roll the dough into approximately 1-inch balls and arrange them on the baking sheets about 1 inch apart. Bake for 10 minutes, then, using a �-teaspoon measuring spoon (or your thumb), make an indentation in each cookie. 8. Pipe some of the cranberry curd into each cookie indentation, then return to the oven until the curd is set and the cookies are slightly golden, 8 to 10 minutes more. Cool for 10 minutes on the baking sheets before transferring to a cooling rack to cool completely. The cookies will keep in an airtight container for up to 5 days.
