This is my mom's recipe for delicious, easy-to-make pickles that are sweet and sour! They're not conventional pickles, but taste like them. Use any substitute like sliced carrots, (daikon) radish, or even fruit!

Number Of Ingredients 4

½ teaspoon salt
1 large English cucumber, cut into 1/4 inch slices
3 tablespoons rice vinegar
3 tablespoons honey

Steps:

  • Place cucumber slices into a colander in the sink and lightly sprinkle with salt, tossing to coat. Allow cucumber to drain for 30 minutes. Gently shake the colander to remove any excess liquid and transfer cucumber to a large bowl. Stir in rice vinegar and honey, making sure to coat each cucumber slice evenly. Cover and refrigerate overnight. Toss cucumber and return to the refrigerator for an additional hour. Serve chilled.

I usually like to eat some savoury dishes, pickles, pickled vegetables, and mustard are the best choices. For this dish, I chose Hangzhou’s local pickle "knobs", which tastes slightly sour and very delicious, especially when served with rice. If you want to make this dish, you can choose local pickles, stir fry with green peppers, you can quickly eat salty and delicious dishes, it is a very simple cooking method.

Number Of Ingredients 7

300 grams pickle
80 grams Hot pepper (small green pepper)
Half a spoon Soy sauce
1 scoop Cooking wine
1 scoop Sugar
Half a spoon Chicken Essence
a little Salad oil

Steps:

  • Prepare small green peppers and pickles
  • Wash small green peppers, wash pickles and cut into small pieces
  • Hot oil pan
  • Add small green peppers and stir fry until the surface of the green peppers is slightly browned
  • Pour in the chopped pickles and stir fry
  • Add half a spoon of soy sauce
  • Add cooking wine (it can be rice wine to make the pickles more delicious)
  • Add 1 tablespoon of sugar, add half a tablespoon of chicken essence, stir-fry evenly, simmer for a while, then serve
