Oven Roasted Asparagus Recipe - Food.com image

Oven roasting enhances the natural aroma of asparagus in the simple, but elegant side dish. Pair Roasted Asparagus with the finest steak or humble poultry to make any meal seem special without fat and extra calories.

Total Time 30 minutes

Prep Time 5 minutes

Cook Time 25 minutes

Yield 4 , 4-6 serving(s)

Number Of Ingredients 3

1 lb asparagus spear, washed and prepared
coarse salt
cooking spray, olive oil flavored

Steps:

  • Preheat oven to 350°.
  • Wash asparagus spears and cut off the tough ends.
  • Lay the spears on paper towels to soak up excess water.
  • Gently spray a large flat baking pan with olive oil flavored cooking spray. (I use a 9"X13" in metal or glass pan).
  • Lay the asparagus spears in the pan. Preferably all laying flat on the bottom of the pan.
  • Generously spray the spears with cooking spray, any flavor--olive oil is good as well as butter flavored spray.
  • Place the pan in the oven on a rack above center, but not on the top rack.
  • Bake for 25 minutes or until roasted and slightly brown.
  • If baked for 25 minutes and the spears are not as brown as desired, broil for two or three minutes.
  • Remove from oven, sprinkle with coarse ground salt and serve immediately.

OVEN-ROASTED ASPARAGUS | MARTHA STEWART

Oven-Roasted Asparagus | Martha Stewart image

A favorite spring vegetable, asparagus is often boiled or steamed but roasting asparagus is easy, as this three-ingredient recipe shows. All you need is olive oil, salt and pepper, and a preheated oven. And the asparagus becomes meltingly soft.

Provided by Martha Stewart

Categories     Spring Recipes

Number Of Ingredients 3

2 pounds asparagus, as fat as possible
2 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees, with a baking sheet inside. Trim and peel asparagus to the point on the stem where it is most tender. Wash well. While asparagus is still moist and wet, drizzle with olive oil. Season with salt and pepper. Place on the preheated baking sheet, and roast until tender to the point of a knife, 25 to 30 minutes, depending on the size of the asparagus.

FOIL BAKED ASPARAGUS RECIPE - FOOD.COM
A very simple method of cooking asparagus, where they are wrapped in foil and baked, with nothing but a little butter and salt. So easy and yet so delicious!! My 2 1/2 year old daughter liked it too! I've only tried this once and I followed the recipe exactly as set out, but I'd like to try it again, perhaps putting a few sprigs of herbs in with it. You could also try herb butter instead of ordinary butter. You can omit the salt if you like. If you are making larger quantities you might need to make more than one "parcel". You could even wrap each portion separately and serve them in the foil wrappers - I ate mine straight out of the foil, and I think it made them even nicer as they're still steaming hot and in their cooking juices, and you can keep all that flavour and aroma trapped in the parcel until you're ready to eat it! Would make a really good starter served like this. Although I suppose it depends what kind of guests you've got - if they're used to silver platters they might not be so impressed with silver foil!! But I would be! :)

  • Roast in oven until spears are just tender. Cooking time will depend on thickness of asparagus, about 10 minutes for medium-thick asparagus. Pencil asparagus will take much less time; thick stalks will take more. Shake pan halfway through cooking time to keep spears from sticking. Just before serving, drizzle asparagus with olive oil and adjust seasoning.
