CHEX MIX CHOCOLATE CHIP COOKIES RECIPES

Steps:

• In a mixing bowl combine the dry ingredients; flour, salt & baking soda. Give the ingredients a quick whisk to mix them together and set aside.
• In a seperate large bowl, cream the butter on medium speed (using a handheld mixer or a stand mixer with paddle attachment) for 2 to 3 minutes. Scrape down the sides of the bowl, add in both sugars and continue mixing for 1 minute. Add in the eggs and vanilla, just mixing until combined. Scrape down the sides of the bowl once more and slowly add in the dry ingredients, mixing on low speed just until combined. Add the chocolate chips and chex mix to the cookie dough and slowly fold them in. Use a cookie dough scoop to scoop out balls of cookie dough and place them on a baking sheet lined with parchment paper. Cover with plastic wrap and place them in the refrigerator to chill for a minium of 2 hours or over night.
• Preheat oven to 375 degrees. Place cookie dough on a separate baking sheet lined with parchment paper and bake for 11 to 12 minutes. Remove from oven and carefully place a few more chocolate chips or pieces of chex mix on the tops of the cookies to make them "pop" (optional). Allow cookies to cool for 5 to 10 minutes before devouring. Store leftover cookies in an airtight container.

Steps:

• Combine cereals, pretzels and nuts in a large bowl and either distribute between two 13x9 pans or you can use a large roaster pan.
• Combine brown sugar, butter and corn syrup in saucepan.
• Bring to boil, stirring constantly over medium heat.
• Boil for five minutes without stirring.
• Remove from heat and stir in vanilla and baking soda.
• Pour evenly over cereal mixture, stir until coated.
• Bake @ 250° stirring every 15 minutes for 45 minutes.
• Cool completely in pan stirring frequently.
• After completely cool stir in chocolate chips & enjoy.
