OLD FASHIONED MOLASSES CANDY | JUST A PINCH RECIPES
My Grandma Workman used to send this to us every Christmas, and I remember one year she wasn't able to and my Dad felt like it wasn't even Christmas. In the early days of Southern Utah, that was just about their only treat...corn bread and molasses. This candy tastes like molasses in hard candy form and that's basically what it is. However, I prefer not to wrap it in foil like my Grandma did. It always stuck and we used to have to tear it off in pieces. Try waxed paper?! It is really good, and brings back such memories.

  • Stir the brown sugar, molasses, butter and vinegar together. Boil them to the hard ball stage (drop forms a hard ball in ice cold water). Add the baking soda and stir rapidly. Turn the mixture at once into a buttered shallow pan 8" square. If desired, spread chopped nuts over the top. Cool the candy and break it into pieces for serving.

  • Preheat oven to 350 degrees. Mix sugar, shortening, molasses, and egg together until well combined. Dump in dry ingredients, stirring dry ingredients together lightly. Mix together until dough is combined. In your hands roll dough into walnut-sized balls, then generously coat each ball with sugar. Place balls on a baking sheet and bake for 9 to 11 minutes, allowing to bake for about a minute after cookies begin to crack. Remove cookies from baking sheet and allow to cool…though these are delicious while still warm.

Fun variation: Drizzle melted white chocolate in decorative stripes over the top of each cookie. Allow to harden before serving. Or: dip half of each cookie in melted white chocolate. Yum.

Another fun variation: Roll the cookie dough in gold, sparkling sugar instead of granulated sugar before baking. Crunchy, sweet and sparkly!

Another fun, fun variation: make sandwiches using two cookies and a scoop of cinnamon ice cream. Yikes.

Another really fun variation: eat all the cookies yourself, then hide all the evidence.

Based on a recipe from 1848, this recipe for authentic butterscotch candy contains only 4 ingredients, is well-balanced and chewy, and is easy to make with an accurate candy thermometer. Truth be told, butterscotch in its original form is a crunchy candy, but using original proportions means that it ends up too bitter when cooked long enough to set up nice and crunchy.
