Irish-inspired round quick bread made with buttermilk and currants or raisins is a new take on traditional Irish soda bread.

2 1/2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup cold Land O Lakes® Butter cut into chunks
1 1/4 cups buttermilk *
1/2 cup currants or raisins

Steps:

  • Heat oven to 375°F. Line baking sheet with parchment paper; set aside.
  • Combine all ingredients except buttermilk and currants in bowl; cut in butter until mixture resembles coarse crumbs. Stir in buttermilk and currants just until moistened.
  • Turn dough onto lightly floured surface; knead gently 10 times. Shape into ball. Place onto prepared baking sheet. Pat into 6-inch circle. Cut 1/2 inch deep “X” in top of dough with sharp knife.
  • Bake 30-35 minutes or until golden brown. Serve warm.

6 tablespoons cold butter or 6 tablespoons margarine
2 cups buttermilk

Steps:

  • in mixing bowl combine flour, sugar, baking powder, soda and salt.
  • stir thoroughly.
  • cut in butter till crumbly,.
  • add buttermilk.
  • stir just enough to moisten.
  • turn on lightly floured surface.
  • knead 8 to 10 times.
  • put in greased 9x5x3 inch loaf pan.
  • bake at 350 for 1 hour or until browned and inserted toothpick comes out clean.
  • this may also be baked in a casserole or on a baking sheet.
  • VARIATION;add one cup raisins or currants.

  • Preheat the oven to 375°. In the bowl of a mixer, combine the flour, sugar, baking soda, and salt. Using your fingers, work 4 tablespoons cold butter into the flour until the butter is in small bits.  In a separate small bowl, whisk the egg into the buttermilk and pour into the flour mixture. Using the paddle attachment, mix on low speed for a few turns, until the dough is barely incorporated; there will still be some dry flour in the bowl. Add the raisins and cranberries and bring the dough together with your hands, kneading until the dough comes together and there aren’t any dry bits of flour left.  Form the dough into a round and place in a medium-size cast-iron pan. With a sharp knife, cut a large X on the top of the dough (this will help it bake through). Bake for 50 to 55 minutes, until the top is golden brown and the bread sounds hollow when you tap on it.  Melt the remaining 4 tablespoons butter. Remove the pan from the oven and brush the top of the bread with the melted butter.

  • Preheat oven to 375º. Grease an ovenproof 10” skillet with cooking spray and line the bottom with parchment paper. In a medium bowl, whisk together flour, ¼ cup sugar, baking soda and salt. Using a pastry cutter, or your hands, work in the butter until it’s evenly incorporated. In a separate medium bowl, combine buttermilk and egg. Add to the dry ingredients and stir until just combined. Do not over mix! Fold in chocolate chips, raisins, or currents, if using. Place dough in skillet and score an “X” on top with a sharp knife. Brush with melted butter and sprinkle with remaining sugar, if using. Bake until golden, or until a toothpick comes out clean, 45 to 55 minutes. When you tap the loaf, it should sound hollow. Cool at least 10 minutes before slicing and serving.
