6 tablespoons butter
1/4 cup sugar
1 egg yolk
1/2 cup chestnut puree
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon salt
1/4 teaspoon cinnamon
3 ounces semisweet chocolate

Steps:

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Beat egg into mixture.
  • Beat puree and vanilla into mixture.
  • Sift and then stir in everything else.
  • Roll scant tablespoon of dough into 2.5" fingers. Place on silpat lined baking sheet.
  • Sprinkle with sugar.
  • Bake about 20 minutes.
  • Cool.
  • Dip 1 end in chocolate and place on waxed paper or silpat.

1 3/8 cups chestnuts
3/4 cup softened butter
13/16 cup dark brown sugar
2 eggs
3 1/4 cups flour sifted

Steps:

  • Cook the chestnuts in boiling water.
  • Once cooked, peel them one by one. Then crush with a fork, and set aside.
  • Preheat oven to 180 degrees Celsius.
  • Beat the butter with the sugar and chestnuts.
  • Add the eggs one by one, and whisk again. Add the flour, and mix for a dry dough.
  • On a floured surface, roll out the dough, and cut out the cookies.
  • Place on a baking tray lined with parchment paper, separated by 4 fingers between each one.
  • Bake for about 15 minutes, or until the cookies are golden.
