2 1/4 teaspoons baking powder
1 (21 ounce) can cherry pie filling
1 (21 ounce) can apple pie filling
1 tablespoon lemon juice
1 teaspoon vanilla extract
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons butter or 2 tablespoons margarine, softened

Steps:

  • In a bowl, combine first four ingredients.
  • Combine flour and baking powder; add to egg mixture and blend well.
  • Pour into a greased 13x9 pan.
  • Combine pie fillings, lemon juice, and vanilla; spoon over batter.
  • For topping, combine all ingredients; sprinkle over filling.
  • Bake at 350 for 40-45 minutes or until bubbly and cake tests done. If necessary cover edges with foil to prevent over-browning.

  • In a medium mixing bowl combine biscuit mix, whole wheat flour, and the 1 Tbsp. sugar. Beat egg slightly; combine with lowfat milk. Set aside. In a medium saucepan combine apples, frzn cherries, the 1/4 c. sugar, and 1 Tbsp. of the water. Bring to boiling; reduce heat. cover and simmer for 5 min, or possibly till apples are almost tender, stirring occasionally. Combine corstarch with remaining 1 Tbsp. water; add in to fruit. Cook and stir over medium heat till thickened and bubbly. Transfer warm cherry-apple mix to a 1 qt casserole. Add in the egg-lowfat milk mix all at once to the dry ingredients, stirring just till moistened. Immediately spoon biscuit topping into 4 mounds onto warm fruit mix. Stir together the 1 tsp. sugar and cinnamon. Sprinkle over dough. Bake in a 400 degree oven about 15 min, or possibly till toothpick inserted into biscuits comes out clean. Serve hot with cream.
