WEST COAST WHITEBAIT PATTIES RECIPE - FOOD.COM
Whitebait is a bit of a delicacy in New Zealand, and whitebait from the West Coast of the South Island is the best. The idea is to have more whitebait than batter, however it you go to a restaurant you will probably find that it's the other way round! West Coasters also serve them with mint sauce which is very tasty. Another thing to do is heat the oven to 50degrees C, and butter 4 slices of white bread. Put these on a plate in the oven (butter side up) and as each whitebait pattie is cooked put them on the bread. Us kids used to fight over the bread at the end as it tastes yummy(strange but true).

Steps:
- Beat the eggs in a large bowl, then mix in the milk.
- Season with salt & pepper to taste.
- Lightly beat through the flour & baking powder to ensure there are no lumps. Add the flour slowly - the mixture should be thick & runny but not too gloopy.
- In a colander, rinse the whitebait and pick out any river stones or other debris.
- Drain, and mix into the egg mixture until well combined.
- Heat a frying pan on medium-high heat, and once heated, add the butter/olive oil.
- Drop in dessert-spoonfuls of the whitebait mixture, and cook until the pattie is set (& starts to go golden on the underside). The whitebait will normally have gone white at this stage.
- Turn, and cook on the other side until golden.
- Keep warm in the oven until ready to serve, in my house they get eaten as fast as they are cooked!

- Heat the oil in a deep fryer or pan to 200ºC.
- Crush the fennel seeds in a pestle and mortar, then combine with the flour and season.
- Working in batches, coat the fish in the flour mixture then very carefully fry for 3 minutes, or until golden and cooked. Remove with a slotted spoon and drain on kitchen paper.
- Pick and finely chop the dill, then combine with the mayonnaise, and season.
- Serve the fish with dill mayo and lemon wedges.

- Wash the whitebait under cold water and dry very well with paper towel. Heat a saucepan filled halfway with vegetable oil over medium heat. Put the flour into a plastic bag with the salt, hold it closed and shake to mix. Put a handful of whitebait into the bag, close and shake to coat with the flour. Remove the whitebait and shake off any excess flour. Repeat this process until all the whitebait are coated in flour. Put on a plate but don?t pile them on top of each other, or they will stick together. When the oil is just forming small bubbles on the base of the pan, add a single whitebait and, when it floats and cooks to golden-brown in 1 minute or less, the oil is ready to use. 1. Sift the flours, bicarbonate of soda, 1 teaspoon of salt and some freshly ground black pepper into a large bowl and make a well in the centre. Gradually add the combined egg and wine, whisking to make a smooth lump-free batter. Stir in the parsley, garlic, onion and whitebait. Cover and leave for 20 minutes.
2. Heat 2.5 cm (1 inch) of oil in a heavy-based frying pan to 180°C (350°F), or until a cube of bread dropped into the oil browns in 15 seconds. Drop tablespoons of batter into the oil, cooking 4 or 5 at a time. When the batter is puffed and bubbles appear on the surface, carefully turn with a long-handled slotted metal spoon and cook the other side. Drain on crumpled paper towels and repeat with the remaining batter. Serve with lemon wedges.
