1 lb slice into 2-inch thick fillets salmon fillet
? cup milk
5 torn bay leaves
5 oz cut into chunks red onion
1 tbsp Italian seasoning
2 tbsp dried dill
to taste salt and ground black pepper
? cup tartar sauce
1 per serving lemon wedge

Steps:

  • Preheat the oven to 325 degrees F.
  • Combine the Italian seasoning and dried dill.
  • Season an un-oiled baking dish with the dried herb mixture.
  • Season the salmon with salt and pepper. Place the salmon in the seasoned un-oiled baking dish.
  • Pour in milk enough to cover ¼ inch of the salmon
  • Cover the fillets with bay leaves and onions. Season with the remaining herb mixture.
  • Bake the salmon in the oven for 30 to 45 minutes until it becomes tender. Make sure to baste from time to time.
  • Serve with lemon wedges, tartar sauce, and mixed vegetables.

1?½ pounds cod fillets
1?½ cups 1% milk
1 onion, chopped
1 teaspoon lemon pepper
1 teaspoon dried parsley
salt to taste
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly coat an 8x8 baking dish with cooking spray.
  • Rinse cod filets and pat dry. Place fish in a single layer in the baking dish. Mix together milk, onion, lemon pepper, parsley and salt; pour over fish filets. Drizzle filets with lemon juice.
  • Bake in preheated oven for 15 minutes, or until fish is firm and can be flaked with a fork.
