Steps:
- Take 2 packages of cream cheese (softened) and mix till slightly whipped.
- Add packet of ranch dressing and mix till incorporated.
- Fold in 1 cup shredded cheese.
- Pour bacon bits in a plate or pie tin.
- Form cream cheese mixture into a ball with your hands.
- Roll ball in bacon bits till covered. Wrap cheese ball in plastic wrap and place in the fridge.
- When cheese ball feels firm, remove and serve with crackers.

- 1. Soften cream cheese to room temperature. In a large bowl slightly beat cream cheese. Add dry ranch mix and mix well with hand mixer. Add cheddar cheese and mix.
- 2. Pour into one large bowl or mold, or into 2 cereal size bowls.
- 3. Cover with plastic wrap and refrigerate an hour. Optional-after unmolding onto serving plate you can cover with chopped pecans.

I came up with these tasty little morsels after having something similar at a tapas restaurant in my hometown. Sadly, that restaurant closed its doors, so I was forced to recreate my favorite dish. *I have made these with havarti and swiss cheeses instead of the cheddar: all are equally good!*
NOTE: After reading the review, please note: You definitely want to use rice that is somewhat sticky. Do not use leftover fluffy rice that has had the starch rinsed off as they will not hold together well.
