I’ve always liked making this, since I was a kid. We’d have the pan going for well over an hour, slowly turning those precious leftovers into an incredible pile of gnarly, starchy, veggie gorgeousness. Good bubble & squeak is hard to beat.

olive oil
25 g unsalted butter
4 sprigs of fresh woody herbs such as rosemary, sage, thyme
600 g leftover roast potatoes
600 g leftover cooked veg such as carrots, swede, turnips, parsnips, Brussels sprouts, kale
leftover vac-packed chestnuts optional

Steps:

    1. Put a 28cm non-stick frying pan on a medium heat with 1 tablespoon of oil and the butter (or, even better, any leftover dripping you have in the fridge).
    2. Pick in the fresh herb leaves and let them crisp up for a minute, then add the potatoes, veg, and any leftover chestnuts you’ve got. There’s no need to chop anything first, as now we’re going to mash it all up with a potato masher into a nice, flat, even layer.
    3. Season well with sea salt and black pepper, and cook for 3 to 4 minutes, or until a lovely golden crust starts forming on the bottom.
    4. Now we get into the rhythm of the secret to good bubble & squeak. Use a fish slice to fold those lovely crispy bits back into the mash, then pat and flatten everything down again. Let it crisp up again, then repeat the process, and – importantly – keep repeating it over a period of about 20 minutes, until it’s golden, super- crispy and delicious. About halfway through, nick a bit, taste it, and correct the seasoning if you need to. When it’s looking good, you can serve it right away, or you can leave it on the lowest heat for a while – the flavour will only improve.
    5. You can serve this any which way you like – let’s be honest, it’s going to be amazing whatever you have it with. I like mine with fried eggs, a little lemon-dressed watercress and a few bombs of Piccalilli. Slices of leftover cooked ham are always going to go down a treat, too.

1 1/2 lb boneless skinless chicken, cut into cubes
8 oz bacon, cooked, crumbled
1 1/4 cups ranch dressing
Pepper to taste
1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Original Biscuits (8 Count) or 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Buttermilk Biscuits (8 Count)
1 cup shredded Cheddar cheese (4 oz)

Steps:

  • Heat oven to 350°F.
  • In 10- or 12-inch skillet, cook cubed 1 1/2 lb boneless skinless chicken until browned and no longer pink in center.
  • In ungreased 13x9-inch (3-quart) baking dish, place cooked chicken, 8 oz crumbled, cooked bacon and 1 1/4 cups ranch dressing; stir until chicken and bacon are evenly coated with dressing. Sprinkle with pepper to taste.
  • Separate dough into 8 biscuits. Cut each biscuit into 8 pieces. Evenly spread biscuit pieces over chicken mixture in dish.
  • Bake 20 to 25 minutes or until biscuit pieces are puffed and no longer doughy.
  • Sprinkle 1 cup shredded Cheddar cheese over top; bake 5 minutes longer or until cheese is melted. Cut into squares to serve.

  • Preheat oven to 375 degrees F. Melt butter in a deep-walled sauté pan over medium heat. Add cinnamon and apples, stirring to combine and cooking for about 2-3 minutes. Add cider and bring to a simmer, cooking until apples have softened, about 5 minutes. Remove apples, adding them to a baking dish, and reserve 2 tbsp of the drippings. Make Cider-Caramel Sauce: Melt butter in a medium saucepan. Add flour, whisking to form a paste, then add cider, brown sugar, granulated sugar and the drippings from the apple filling. Stir to combine, bringing sauce to a simmer and cooking for about 3-4 minutes, or until it forms a dark brown sauce thick enough to coat the back of a spoon. Make cinnamon-sugar biscuits: Cut Pillsbury biscuits in half, rolling them into balls. Combine with cinnamon and sugar, coating them evenly. Pour biscuit balls and apple filling into a 13”x9” baking dish. Pour cider-caramel sauce on top, giving everything a light stir to mix. Bake for 20-25 minutes, or until the biscuits have baked to a puffy, golden brown.

  • Ingredients out • Kettle boiled • Large casserole pan, high heat • Small frying pan, high heat • Large lidded pan, high heat • Food processor (thick slicer) START COOKING Squeeze the sausage meat out of the skins into the casserole pan with the fennel seeds and rosemary leaves (discard the sausage skins). Break the meat apart, stirring regularly. Finely slice the bacon, put into the small frying pan with 1 teaspoon of olive oil and the hazelnuts and cook until golden, then add the maple syrup or honey and remove from the heat. Line the beans up and cut off the stalks, then put them into the large pan, cover with boiling salted water and the lid. Cook for 4 minutes, then add the greens, tearing up any larger leaves. Pour the wine into the sausage pan and let it bubble away while you check on the beans and greens. If done, use a slotted spoon to transfer them to a colander to drain, leaving the pan of water on the heat. Tear the broccoli tips into the sausage pan, then slice and add the stalks, along with the passata. Add the gnocchi to the pan of water the greens were cooked in and pop the lid on. Mix the extra virgin olive oil, vinegar and a pinch of sea salt and black pepper in a serving bowl, tip in the drained greens and toss to coat, then scatter over the crispy nuts and bacon. When the gnocchi have been floating for a couple of minutes, drain them and toss with the sauce. Season to taste and serve in the pan, or on a nice platter, drizzled with yoghurt.

Bubble and squeak is a dish created out of leftovers and it’s become one of our great British recipes. The first recorded recipes for it were written in the early 1800s, when any roasted shredded meat or vegetables left over from Sunday’s dinner would be fried in the pan the next day to create this big and beautiful veggie patty. But it’s so damn good you shouldn’t have to wait for leftovers to enjoy it, so I’m giving you this recipe as a guide. As long as you use 60% potato, you can make the rest up using whatever you’ve got to hand – vegetables, crumbled chestnuts, herbs, crispy bacon or leftover meat. In the cockney cafés they call this ‘bubble’, and serve it alongside eggs for breakfast. Because it often sits in the pan for ages getting dark and crispy, it tends to take on a fairly dark grey and rather ugly colour, but ironically, those are often the tastiest bubble and squeaks of all.

    1. Peel and trim all the vegetables, cutting the root veg into 2.5cm dice.
    2. Cook the veg in a large pan of boiling salted water for 10 minutes, or until they are all cooked through.

    8. Halfway through the cooking, flip it over using a fish slice, or like a pancake if you’re brave. If it breaks don’t worry, just push it back together.
    9. Let it crisp up on the underside then nick a bit and taste it. This is the time to correct the seasoning. Once you’re happy, serve it with a blob of HP sauce and whatever else you fancy.
