- Preheat air fryer at 400°F for 5 minutes.
- Wash potatoes and dry them well. Cut baby potatoes in half so that the pieces are about ¾ inch. Place in a large bowl.
- Drizzle olive oil over the potatoes and sprinkle with Italian seasoning, garlic powder, salt and pepper. Toss to coat evenly. Sprinkle the Parmesan over the potatoes and stir to evenly distribute.
- Place potatoes in a single layer in the air fryer and shake the basket so that there is a bit of room in between each piece. You want the air to be able circulate around them as they cook. (Air fry in batches as needed.)
- Air fry at 400° F for about 14 minutes, tossing about half way through the cook time. Potatoes are done when they are browned on the edges and tender when pierced with a fork.
- If cooking in batches, you can put all of the potatoes back in the air fryer once they are all cooked and cook for 1-2 minutes to reheat earlier batches. This way, you can serve all of the potatoes hot at the same time.
- Serve potatoes immediately, seasoned with additional salt and Parmesan cheese if desired, to taste.
