1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon fine sea salt
1 bananas ripe, medium-sized
2 large eggs
1 cup milk dairy or dairy-alternative
3 tablespoons unsalted butter melted
4 tablespoons unsalted butter
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1 pinch fine sea salt
2 teaspoons spiced rum
2 cups bananas sliced
1/4 cup walnuts or pecans, pieces

Steps:

  • Whisk together the flour, baking powder, and salt in a large mixing bowl.
  • Make a well in the bowl by pushing the dry ingredients along the sides. In the center, mash the banana with a fork until very smooth.
  • Whisk in the eggs, milk, and melted butter and continue to combine all of the ingredients until mixed well.
  • Heat a frying pan to medium heat and grease lightly with vegetable oil. Spoon on 1/4 cupfuls batter onto the hot pan while making sure the pancakes do not touch each other. Cook until bubbles begin to form and pop. Then flip and cook for 1 more minute or until that side is also golden brown. Continue to do this until batter is gone, and set cooked pancakes aside.
  • Prepare the topping (see below) and serve pancakes warm with topping spooned over top.
  • Melt the butter and brown sugar in a pan on medium. Stir frequently and watch carefully so it doesn't burn.
  • Add in the cinnamon, salt, and rum, and stir fast and quick to combine well.
  • Add in the bananas and stir gently to coat them. Remove the pan from the flame and spoon topping over prepared pancakes.
  • Sprinkle with walnut or pecan pieces, if desired, and serve.

2 tbsp butter (melted)
1 egg
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1/2 cup butter
1/4 cup brown sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 cup maple syrup
1/4 tsp rum extract
4 ripe bananas (sliced)

Steps:

  • Melt the butter in a large bowl, then whisk in the egg.
  • Add the flour, baking powder, baking soda, salt, and buttermilk. Mix until just combined, the batter should be a bit lumpy. Add more buttermilk if needed.
  • Heat a pan on the stove top. Add about a ¼ of a cup of batter to the pan for each pancake. Cook until the top is dry and the bottom is golden brown then flip and wait for the bottom to brown before taking the pancake off.
