SUPER EASY: BAKING SAUSAGE RECIPE - FOOD.COM

Super Easy: Baking Sausage Recipe - Food.com image

My daughter taught me to cook bacon with no splatter or mess on the stove top, by baking it instead. So I decided to try baking breakfast link sausage the same way. I use a 10"x15" jelly roll pan or the bottom of a broiling pan. I buy parchment paper for baking in rolls in bulk online. I bake 3 pounds of maple breakfast link sausage at a time and freeze it in individual servings.

Total Time 30 minutes

Prep Time 5 minutes

Cook Time 25 minutes

Yield 36 serving(s)

Number Of Ingredients 3

1 lb breakfast sausage links
1 lb breakfast sausage links
1 lb breakfast sausage links

Steps:

  • Preheat oven to 400 degrees F.
  • Line a 10"x15" jelly roll pan with parchment paper for cooking/baking.
  • Place one package of sausage links in the jelly roll pan flat on top of the parchment paper in a single layer.
  • When the oven comes up to temperature, place the pan with the sausage on the middle shelf of the oven and bake for 15 minutes.
  • When the time goes off remove the sausage from the oven and rotate them to the other side.
  • Place them back in the oven for another 10 minutes or until sausage is thoroughly cooked through.
  • Remove finished sausage to paper towels or brown paper and blot excess grease off of the links with paper towels.
  • Repeat process until entire 3-pounds of sausage is cooked.
  • Freeze in portion sized bags.
  • Afterward, clean-up is a breeze. Wait for grease to cool and then throw away parchment paper.

SAUSAGE ROLL RECIPE | JAMIE OLIVER RECIPES

Sausage roll recipe | Jamie Oliver recipes image

Absolutely beautiful served warm from the oven, these tasty sausage rolls are a total joy.

Total Time 1 hours 5 minutes

Yield 4

Number Of Ingredients 9

olive oil
1 red onion peeled and finely sliced
1 sprig fresh sage leaves picked
6 higher-welfare pork sausages
1 handful breadcrumbs
fresh nutmeg for grating
250 g ready-made puff pastry
1 free-range egg
a little milk

Steps:

    1. Preheat the oven to 180ºC/350ºF/gas 4. Heat the olive oil in a saucepan and add the onions. Cook gently for about 20 minutes until soft and golden brown. Add the sage leaves, cook for a couple of minutes more and then spread out on a plate to cool.
    2. With a sharp knife, slit the skins of the sausages and pop the meat out. Put it in a mixing bowl with the cooled sage and onion mix and the breadcrumbs. Add a good grating of nutmeg, then scrunch well with your clean hands to mix together.
    3. On a floured work surface, roll the pastry out into a big rectangle as thick as a pound coin and cut it lengthways into two long, even rectangles. Roll the mixture into sausage shapes with your hands and lay along the centre of each rectangle.
    4. Mix the egg and milk and brush the pastry with the mixture, then fold one side of the pastry over, wrapping the filling inside. Press down with your fingers or the edge of a spoon to seal the join.
    5. Cut the long rolls into the sizes you want and space them out on a baking tray. Brush with the rest of the egg wash and bake in the preheated oven for 25 minutes or until puffed, golden and cooked through. Serve with piccalilli and a cress salad.
    6. Tip: Lamb or beef sausages work just as well in this recipe if you don’t fancy pork.

    4. Heat a lug of oil in a large ovenproof casserole pan over a medium heat, add the leeks, celery, garlic and red pepper and cook for around 10 minutes, or until the leeks start to soften, stirring regularly.
    5. Next, add the spices and cook for a further 2 minutes, then add all of the remaining ingredients, draining the beans first, along with a splash of water.
    6. Stir everything together well, then push the grilled sausages under the surface of the passata and bring everything to the boil.
    7. Turn the heat down to a simmer and continue to cook with a lid on for a further 45 minutes. Regularly check that it isn’t getting too dry while it’s cooking – you can always add a splash of water if it is.
    8. Have a taste and see if you think it needs a splash more vinegar, then pick, roughly chop and scatter over the parsley (if using).
    9. Delicious served with baked sweet potatoes or brown rice and a nice chopped green salad.
