Smoky, sticky, falling-off-the-bone ribs are easier than you think. Just cook them long and slow -- on the grill or in the oven.

2 racks baby back pork ribs (about 2 1/2 pounds total)
1/2 cup packed dark-brown sugar
Coarse salt and ground pepper
1/4 cup Cajun seasoning
3 tablespoons smoked or sweet paprika
1 1/2 teaspoons cayenne pepper
1 1/2 teaspoons ground mustard
1/4 cup chili sauce
1/4 cup chopped chipotle chiles in adobo
2 tablespoons honey

Steps:

  • Make the sauce
  • Cook on the grill

Smoky Sweet Baby Back Chili | Just A Pinch Recipes image

If using baby back ribs in chili is wrong, then we don't want to be right. The meat is juicy and tender. It adds a whole different flavor to the chili than traditional recipes. This is a mild chili that's smoky and a little sweet. If you want to add a little heat, add a bit of cayenne or diced jalapeno peppers to the recipe. We covered our baby back ribs with aluminum foil and cooked them for 3 1/2 hours at 275 degrees. If you like a thinner chili, add an additional cup of water. We can't wait to make this baby back chili again.

Number Of Ingredients 10

1/2 rack of baby back ribs, pre-cooked
1/2 cup(s) diced onion (preferably vidalia)
1 can(s) diced tomatoes, 14.5 oz.
2 can(s) mixed beans (chili blend), 15 oz.
1 can(s) tomato paste, 6 oz.
1 package(s) medium chili seasoning
1/4 cup(s) brown sugar BBQ sauce
1/4 cup(s) finely diced green and red pepper
1 1/2 cup(s) water
1 dash(es) liquid smoke flavoring

Steps:

  • In a large pot, put heat to medium-low or in a Crock Pot on medium.
  • Pull a part off the bone into small to medium sized shreds and chunks of the baby back ribs. Place in the pot.
  • Add all of the diced veggies and the can of tomato paste. Then stir it together.
  • Add the can of diced tomatoes with all of the juices into the pot. Stir.
  • Add the cans of bean blend (juices included). Then add the water and barbecue sauce. Stir.
  • Bring to a low boil then lower back down to medium-low. Add the liquid smoke and stir. After 10 minutes cover, and then simmer for approximately 30 minutes so all the flavors can marry. Serve with cornbread, garlic sticks, or Parmesan breadsticks.
