"Sauce for baked fish"

2 cups Mayonnaise
1 cup Parmesan cheese freshly grated
1/8 cup Dill fresh
1 or 2 Sweet onion sliced whole, round & thin
3 Mexican Limes sliced whole, round & thin (1/16 or 1/8'')

Steps:

  • "Mix all ingredients in a bowl except onions and limes. Lay onion slices out on the bottom of casserole dish. Put fillets on top of onion slices and then spread mayonnaise mixture on top of fish. Fish should be covered but not drowned in mayonnaise sauce. Garnish the top with lime slices. Put in oven and cook 20-25 minutes @ 350 depending on how thick your fillets are. It should look slightly brown on top like pizza cheese but be moist and tender inside. Do not overcook!"

fresh wahoo cooked in griddle pan after 30 min marinade in olive oil, cayenne pepper, lemon juice, lime juice, chillli flakes.

4 wahoo steaks
1/2 cup olive oil
1 tablespoon lemon juice
1 tablespoon lime juice
1 teaspoon cayenne pepper, spice
1 pinch of crushed chili pepper flakes
1/2 teaspoon salt
1 teaspoon pepper
2 tablespoons minced garlic

Steps:

  • Make you marinade, mix olive oil, lemon juice, lime juice, cayeene pepper, chilli flakes in a bowl.
  • rinse and pat dry your wahoo and put in the marinade.
  • cover marinading fish and put in the fridge for 30 minutes.
  • heat griddle pan - you don't really need oil because you can use the oil from the marinade whilst cooking.
  • put the fish in the pan, add salt and pepper to fish steaks.
  • flip them several times for even cooking and add garlic about halfway through the cook time. They take about 15- 20 minutes in total.
