1 pound baby Yukon Gold potatoes, quartered
4 link (4" long x 1-1/8" dia)s smoked sausage links, sliced
1 yellow squash, finely chopped
1 large onion, finely chopped
1 orange bell pepper, finely chopped
1 yellow bell pepper, finely chopped
4 tablespoons butter, cut into small pieces
½ teaspoon seasoned salt (such as Lawry's®), or to taste
½ teaspoon garlic powder, or to taste
1 pinch ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine potatoes, sausage, squash, onion, bell peppers, butter, seasoned salt, garlic powder, and pepper in a 9x13-inch glass baking pan. Cover with aluminum foil.
  • Bake in the preheated oven until potatoes are soft, about 30 minutes.

My version of my grandmother's layered elbow, smoked sausage, stewed tomato, and cheese casserole.

Number Of Ingredients 14

1 teaspoon butter
1 teaspoon olive oil
3 cups elbow macaroni
1 pound smoked beef sausage, cut into bite-size pieces
2 (14.5 ounce) cans stewed tomatoes, chopped, juices reserved
1 sweet onion, diced small
2 ounces shredded sharp Cheddar cheese
2 ounces shredded Monterey Jack cheese
2 teaspoons olive oil, or more to taste
1 teaspoon dried parsley flakes
¼ teaspoon onion powder, or more to taste
¼ teaspoon garlic powder, or more to taste
salt and ground black pepper to taste
1 (8 ounce) package shredded American cheese (such as Kraft® Melts)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking dish and oil with 1 teaspoon olive oil.
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
  • Stir sausage, tomatoes and reserved juice, onion, Cheddar cheese, Monterey Jack cheese, 2 teaspoons olive oil, parsley, onion powder, garlic powder, salt, and ground black pepper together in a large bowl. Add elbow macaroni and stir. Pour macaroni mixture into prepared baking dish, sprinkle with American cheese, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove aluminum foil from baking dish, increase heat to 425, and bake until sauce is bubbly, and the top is golden brown, about 15 minutes. Cool for 15 minutes before serving.

  • In a Dutch oven, over medium heat, cook sausage, onion and garlic in oil until onions are tender.  Add green pepper, mushrooms, salt and seasoning; continue to cook for 4 minutes.  Stir in tomatoes, water and basil.  Simmer, uncovered, for 20-25 minutes.  Add prepared spaghetti to sauce; toss to coat evenly.  Spoon one-half of the pasta mixture into a greased 2-1/2 quart baking dish.  Sprinkle with one-half  of the cheese.  Top with remaining pasta mixture and cheese.  Bake, covered, at 375°F for 20-25 minutes.  Remove cover, bake 5 minutes longer.  Serve.

Hey, this was GOOD and I credit Mareesme for turning me on to the basic ingredients and some shrewd seasoning with the little touch of brown sugar.
