Make Oven Beef & Noodles for a hearty and almost homemade supper that satisfies.

Yield Makes 6 to 8 servings

Number Of Ingredients 6

1 1 1/2 oz. pkg. onion soup mix
4 cups water
1 10 3/4 oz. can cream of mushroom soup
1 3-lb. boneless beef chuck roast
1 12-oz. pkg. kluski egg noodles, uncooked
2 tablespoons dried parsley

Steps:

  • Combine onion soup mix and water in a covered roasting pan; stir in mushroom soup. Place roast in pan on top of soup mixture. Cover and bake at 350 degrees for 4 hours, or until meat is very tender.
  • Remove roast from pan and shred; return to pan. Add noodles to pan; reduce heat to 300 degrees and bake for 20 to 30 minutes, checking and stirring every 15 minutes until noodles are tender. Add water if necessary to prevent drying out. Sprinkle with parsley before serving.

3 lbs Beef Chuck Roast
12 oz Egg Noodles
1 1/2 oz Dry onion soup mix
3 1/2 cups Water
1/2 cup Red wine
1 can Campbells Cream of Mushroom
1 Onion sliced
1 8 oz pkg Mushrooms sliced
2 Tbsp Extra virgin olive oil

Steps:

  • "Preheat oven to 350 degrees. Heat oil in large pan. Season roast to your preference, I use Adams Reserve House All Purpose Rub and Worcestershire sauce. Brown roast on both sides and set aside. Combine water, wine, dry onion soup mix, cream of mushroom soup and place in a 9x13 baking dish. Add mushrooms and onions and then place roast in pan. Cook roast for 4 hours, uncovered, flipping once. Remove roast and shred, then return to pan and add egg noodles. Reduce heat to 300 and bake for an additional 30 minutes or until noodles are tender. Add water or more cream of mushroom soup if needed."

This is an easy way to make old fashioned beef and noodles... a Indiana staple. Mom made this back in the early 1960's. The oven version was great. She could prepare the meat/soup mixture in a casserole dish ahead of time (like on Saturday evening) and pop in the oven before church on Sunday morning. Then it was ready after church. Sometimes she would fix this before going out to work on the family farm and it would cook in the oven until lunch or supper. I am sure the meat could easily be prepared in a crock pot, too. This is good simple country fare and we all loved it

I was looking for a recipe for beef and noodles that didn't use any sort of condensed soup. I found one at Better Homes & Gardens and made a few changes to come up with this. I use Homemade Noodles (recipe 27344) for the noodles, and they absorb a lot of liquid so this is pretty thick - if you like it thinner, adjust accordingly (I've not tried this with purchased noodles but they may make a difference as well).
