  • Cut each peach into 8 slices. In a large bowl, toss peaches with lemon juice. Line a baking sheet with parchment paper, then lay peach slices in a single layer, making sure they are not touching each other. Freeze until solid, about 2 hours. Transfer frozen peaches into a resealable plastic bag, pushing as much air out of the bag as possible before sealing it. Keep frozen until ready to use. Bring a medium pot of water to a boil. Fill a medium bowl with ice water. Using a paring knife, cut a shallow "x" into the top of each peach. Add scored peaches to pot and blanch for 20 to 30 seconds. Use a large slotted spoon to transfer peaches to ice bath to stop the cooking process.  Gently peel skin off peaches and cut each peach into 8 slices. In a medium bowl, toss wedges with lemon juice. Line a baking sheet with parchment paper, then lay peach slices in a single layer, making sure they are not touching each other. Freeze until solid, about 2 hours. Transfer frozen peaches into a resealable plastic bag, pushing as much air out of the bag as possible before sealing it. Keep frozen until ready to use.
