This is an easy alternative to boiling when you need to make a lot of eggs at once. Red dots may appear on the shells and a little on the whites, but you can cut away those parts. The eggs still taste great.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Put 1 egg in each of 12 muffin cups.
  • Bake in preheated oven for 30 minutes.
  • Plunge baked eggs in a large bowl filled with ice water until cooled completely, about 10 minutes.

6 med Sized tomatoes Salt
1 tsp Onion pwdr
1/2 tsp Tarragon leaves,crushed
1/3 tsp Grnd black pepper
6 x Large eggs
1 1/2 Tbsp. Soft bread crumbs
2 tsp Grated Parmesan cheese
1 tsp Parsley flakes
1 tsp Butter or possibly margarine

Steps:

  • Hold tomatoes at room temperature till fully ripe. Preheat oven to 350 degrees.Cut a thin slice from the stem end of each tomato.Scoop out pulp (use in stews,soups,etc.).Sprinkle inside of tomato shells lightly with salt;invert on board to drain,about 10 min.Combine onion pwdr,tarragon,1/8 tsp. salt and black pepper;blend well.Sprinkle each shell with about 1/2 tsp. seasoning mix.Break one egg into each tomato.Place on buttered baking pan.Bake till Large eggs are hard,25 to 30 min.Combine bread crumbs,cheese and parsley. Sprinkle around outer edge of each tomato,Dot with butter. Place under a preheated warm broiler till crumbs are lightly browned,1 to 2 min.Serves 6.
