2 medium zucchini, sliced
2 carrots, sliced
1 (14-ounce) can baby corn, drained
8 chicken thighs, skinned
2 green onions, sliced
1 tablespoon sesame seeds, toasted and divided
? cup soy sauce
3 tablespoons hoisin sauce
1 tablespoon minced fresh ginger
1 garlic clove, pressed

Steps:

  • Tear off 4 (18- x 12-inch) heavy-duty aluminum foil sheets.
  • Place first 3 ingredients evenly in the center of each sheet; top each with 2 chicken thighs. Sprinkle with green onions.
  • Stir together 2 teaspoons sesame seeds and next 4 ingredients; spoon evenly over chicken.
  • Bring up 2 sides of each foil sheet, and double fold with about 1-inch-wide folds. Double fold each end to form a packet, leaving room for heat circulation inside packet.
  • Grill, covered with grill lid, over medium-high heat (350° to 400°) about 35 minutes or until chicken is done. Sprinkle with remaining 1 teaspoon sesame seeds before serving.
  • Prep: 10 min., Grill: 35 min.
  • Note: Hoisin sauce may be found in the Asian section of your grocery or in an Asian market.

½ cup vegetable oil
¼ cup cider vinegar
1 tablespoon garlic powder
1 teaspoon ground black pepper
½ teaspoon salt
½ teaspoon dried basil
½ teaspoon dried thyme
4 skinless, boneless chicken breast halves
4 large potatoes, peeled and cut into 1/4-inch slices
2 large onions, cut into 1/4 inch thick slices
2 large green bell pepper, cut into 1/4 inch strips
2 cups sliced button mushrooms

Steps:

  • Preheat an outdoor grill for medium-high heat.
  • Stir together the vegetable oil, cider vinegar, garlic powder, black pepper, salt, basil, and thyme in a bowl; set aside.
  • Lay out 4 12x12 inch squares of aluminum foil. Place 1 chicken breast in the center of each square, top with potatoes, onions, bell peppers, and mushrooms. Ladle 1/4 of the sauce on each and fold the foil around the ingredients to form four sealed packets.
  • Grill the packets on the preheated grill for 30 to 40 minutes, until the internal temperature of the chicken breasts reaches 170 degrees F (75 degrees C).
