TRADITIONAL JAPANESE RECIPE: Unagi Sauce or Unagi no Tare (??????) is a type of thick and sweetened sauce, based on soy sauces. It is used in different Japanese dishes that contains BBQed eel. It can be used when grilling eel, on top of an eel roll or nigiri. In sushi, it's usually served with such dishes as Unagi (eel) roll, and dragon roll, and can be served with other rolls as well. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

0.25 cup Soy Sauce
0.25 cup Mirin
2.5 tablespoons Sugar
1.5 tablespoons Sake

Steps:

  • Turn on the heat to medium and combine in a small saucepan Mirin, Sake and Sugar.
  • As soon as the mixture starts boiling, add the Soy Sauce and reduce the heat to low.
  • continue simmering for 20 minutes.
  • After 20 minutes the Sauce will have lots of tiny bubbles on the surface, that's normal.
  • Turn off the heat and let it cool.
  • As the Sauce cools, it will thicken. Once cool, store the Sauce in an airtight jar and keep in the refrigerator for up to 1 week...

TRADITIONAL JAPANESE RECIPE: Unagi Chazuke Recipe ( ???? ) is a very popular dish in Japan, more precisely in Nagoya, where it was invented. The whole dish is pretty much very similar to Hitsumabushi (????). Unagi (??? or ?) is a japanese freshwater eel, while Chazuke or ochazuke (????) is a dish where green tea or dashi broth is poured over steamed rice. The Eel is simply broiled and served with hot broth but for the best result, as usual, you should only buy Japanese food. For this recipe we will not use Teriyaki sauce, although, you are free to add it. It's mouthwateringly delicious, but may take some practice.

4 cups Dashi
4 teaspoons Konbucha
4 serving Cooked Japanese Short-Grain Rice
2 Fillet Unagi Eel
6 tablespoon Unagi Sauce
2 green onion or scallion
2 bunches Mitsuba Japanese Parsley
2 teaspoons Toasted White Sesame Seeds

Steps:

  • Combine Dashi and Konbucha in a small saucepan.
  • Heat the Broth over medium heat and whisk well.
  • Taste the Broth and adjust the amount of Konbucha or Salt if necessary. Turn the heat to minimum and move to the next step.
  • Cut Unagi in half or thirds,any size that fits inside the serving bowls.
  • Line a baking sheet with parchment paper.
