I tried for years to make dinner rolls as light airy and fluffy as the ones my sister N Law Sandra made, all to no avail, until I found this recipe. This is the recipe you want to try when all else has failed. It worked for me and I am sure it will work for you too. We just LOVED HOW LIGHT, AIRY, TASTY & FLUFFY THEY WERE. So now this is my favorite go to recipe when I want perfect dinner rolls. I don't know what I was doing in the past that DIDN'T WORK, but this is the one that works for me now, and it is a keeper. The neighbors love them too. I am confident you will too. So give them a try.

3 cup(s) warm water(110*-120*f)
1 cup(s) granulated sugar
2 package(s) rapid rise yeast
2/3 cup(s) canola oil or melted butter ( i always use butter)
1 tablespoon(s) salt
8 cup(s) bread flour

Steps:

  • PREHEAT OVEN TO 375 DEGREES F. about 15 to 20 minutes before you are ready to bake them. Combine warm water, sugar, & yeast in a medium bowl. Stir until completely dissolved. Let sit about 10-15 minutes until it has puffed on top.NOTE: If water is too hot it will kill the yeast, if it is too cold it will not activate. This is what the yeast looks like after 15 minutes and it is activated.
  • Combine oil or butter & salt with 6 cups of bread flour, then add water and yeast mixture, in a large MIXING bowl. Beat with a regular paddle on medium for about 2 minutes, just until it is mixed together.
  • Switch from paddle to the DOUGH HOOK, THEN ADD AN ADDITIONAL 1 1/2 CUPS FLOUR.KNEAD DOUGH FOR AT LEAST 5 MINUTES.
  • NOW TURN DOUGH ONTO A FLOURED SURFACE with the remaining 1/2 cup flour, and you might need more, but hand knead for a few minutes to remove air bubbles.
  • Next add about 2 tablespoons oil to bottom of a large bowl, add the dough and then grease on all sides. Cover loosely with clear plastic wrap.NOTE: I spray wrap first with cooking spray to keep the dough from sticking when it rises to the top. Allow dough to rise until it is about double in size about 1 hour to 1 1/2 hours in a warm draft free area.
  • Punch down and shape into desired roll shapes.Roll out on a floured surface. Makes about 18 rolls in a 9X13 X2 inch pan or about 13 Rolls in a 9 inch pan. Roll and cut out with biscuit cutter, dip in melted butter, fold the buttered side outward and the floured side together inward & place in buttered or greased baking pan. I made 4- 9 inch size pans with 13 rolls in each pan. NOTE: I HAVE NOW DISCOVERED IT IS MUCH EASIER TO BRUSH THE DOUGH WITH MELTED BUTTER ONCE IT IS ROLLED OUT, THEN CUT WITH BISCUIT CUTTER, AND KEEP THE BUTTERED SIDE TO THE OUTSIDE AND THE FLOURED SIDE IN.
  • Cover loosely with plastic wrap(spray first for easy removal) and let rise till double in size about 45 minutes. Carefully remove wrap and bake uncovered 18 minutes until golden brown. Brush tops with melted butter immediately after removing from oven.
  • NOTE: MAY FREEZE IN ORIGINAL PAN. but cover with large freezer bag or use foil & wrap tight.To preheat later, remove from freezer, cover loosely with foil, place in preheated 350 degree F. Oven for about 15 to 20 minutes if frozen. If fully thawed, place in preheated oven covered with foil for 5 -6 minutes. Will also make about 3 loaves of bread or cinnamon rolls.
  • Please note I made a pan for one of the neighbors, and gave her the heating instructions, I pre cooked them all but a few minutes, just before they were completely browned and all she needed to do was leave them in the oven for about 5 to 8 minutes until they were browned.
  • Main ingredients needed to make the rolls, I prefer to use Bread Flour, and I like to USE A THERMOMETER to make sure I get an accurate read on the temperature of the water. PLEASE NOTE I ALWAYS PRINT OUT EACH RECIPE I PLAN TO MAKE FOR THE HOLIDAY AND THEN TAKE THEM TO THE UPS STORE AND HAVE THEM COILED BOUND TOGETHER, FOR EASIER ORGANIZATION.

This is an easy homemade pizza dough that I made 4 my husband using Bread Flour combined with Whole Wheat flour for added texture & fiber. It is so simple & easy. While you allow it to rise you can chop up the toppings, & before you know it, it is ready to bake. I used ingredients I had on hand, you can do the same, I used precooked Brown & serve Turkey sausage, & other available ingredients, it turned out so tasty & delicious, & it made a Jelly Roll pan size, you can cut as desired, about 19 minutes total in the oven & it is ready to eat. My husband loves Pizza & especially this one.

EASY HOMEMADE PIZZA DOUGH
1 cup(s) whole wheat flour
2 cup(s) bread flour or all purpose
2 package(s) rapid rise yeast
21/2 tablespoon(s) extra virgin olive oil (my choice) or canola or vegetable oil
3/4 teaspoon(s) kosher salt
1 tablespoon(s) sugar
1 1/3 cup(s) hot water (120 degrees or little under)
2 tablespoon(s) yellow corn meal (can use white also)
TOPPING INGREDIENTS AS DESIRED
4 ounce(s) precooked sausage patties, cubed
1/4 medium red bell pepper chopped or thin slices
1/4 medium green bell pepper, chopped or thin sliced
15-18 slice(s) pepperoni or as desired
2 teaspoon(s) italian seasoning or oregano
1 1/2 cup(s) pizza or thick pasta sauce
2 cup(s) shredded mozzarella cheese
1 cup(s) shredded cheddar cheese
1 1/2 cup(s) shredded gruyere swiss cheese

Steps:

  • PREHEAT OVEN TO 475 DEGREES F. Using a medium size bowl add the whole wheat and bread flour together. STIR TILL THE FLOURS ARE BLENDED TOGETHER.
  • Then scoop out ONE CUP of the flour mixture & add it to the mixing bowl, that has been equipped with a dough hook attachment. Now add in the 2 packages of yeast, sugar, salt, extra virgin olive oil, and begin slowly to mix.
  • Add in the hot water and increase speed till flour begins to blend together.
  • Gradually add in MOST OF remaining flour,(WILL NOT NEED ALL OF IT) with increased speed, and beat until mixture comes together and forms a soft ball of dough that is not sticky. SHOULD LOOK LIKE DOUGH IN PICTURE. With the addition of the whole wheat flour knead at least 6 or 7 minutes or so.
  • Remove from mixing bowl, then grease a medium size bowl with olive oil, add the ball of dough, and grease all sides of ball of dough. Then cover with a heavy dish towel to keep warm, and allow to rise while you prep the veggie toppings for the pizza. I LEFT BOWL ON STOVE TOP WHILE IT WAS PREHEATING TO ALLOW DOUGH TO RISE at least 15 minutes, I let mine rest for about half hour.
  • Cube the precooked sausage patties into cubes, until they resemble the ones in picture. YOU MAY WANT TO USE OTHER TOPPINGS, or no meat at all.
  • Chop remaining veggies and shred cheese if needed, and add to a large platter, till you are ready to top pizza.
  • Spray a long jelly roll size pan with cooking spray, and then dust lightly with the 2 tablespoons of yellow corn meal, then shake to coat the entire bottom of pan.
  • Now the pizza dough should be ready, it is at least double in bulk. Notice dough in step #5 and now in step #9 how much it rose in the bowl.
  • Now press dough out with fingers into pan, pushing out to the outer edge, and into corners, until the desired thickness is reached. Should look somewhat like the picture. NOW PLACE IN THE PREHEATED OVEN FOR 4 MINUTES ONLY, this is to assure that crust will not be soggy when it is completely cooked with added toppings.
  • After 4 minute time lapse, remove from oven, and add the pizza/pasta sauce, leaving about a 1 inch border on all sides NOT COVERED WITH SAUCE. Now sprinkle with Italian seasoning or oregano.
  • Top with topping ingredients as desired. I started with some of the mozzarella cheese first after adding the sauce, then added the sausage, peppers, cheddar cheese, and shredded gruyere cheese, can top with additional Italian Seasoning if desired before baking. NOTE: IF YOU WEIGH THE CRUST DOWN WITH TOO MANY INGREDIENTS, THE CRUST MAY BE SOGGY AFTER COOKING.
  • Place in preheated 475 degree F. oven and bake for 15 minutes or until cheeses has melted and toppings is hot and bubbly. Remove from oven.
  • Using a pizza cutter, cut into desired size slices, and serve immediately. I got about 15 nice size serving slices.
