Number Of Ingredients 15

2/3 cup water
1/4 cup plus 2 tablespoons light brown sugar
1/3 cup dark soy sauce
One 1 1/2-inch piece of peeled fresh ginger, crushed, plus 1 tablespoon finely chopped peeled fresh ginger
1/3 cinnamon stick
1 star anise pod
1/2 teaspoon fennel seeds, crushed
1 1/4 teaspoons Sichuan peppercorns
2 tablespoons peanut butter
1 tablespoon toasted sesame oil, plus more for serving
1 tablespoon unseasoned rice wine vinegar, plus more for serving
1 garlic clove, sliced
1 pound fresh or dried thin egg noodles—cooked, drained and cooled
1 small bunch of scallions, thinly sliced
Chile paste or hot sauce, for serving

Steps:

  • In a small saucepan, combine the water, brown sugar, soy sauce, crushed ginger, cinnamon stick, star anise, fennel seeds and 1 teaspoon of the Sichuan peppercorns and bring to a boil. Reduce the heat to moderate and simmer for about 20 minutes. Strain the sauce through a fine sieve; discard the solids.
  • In a blender, puree the sauce with the peanut butter, 1tablespoon of sesame oil, 1 tablespoon of vinegar, choppedginger, garlic and the remaining 1/4 teaspoon of Sichuanpeppercorns. In a large bowl, toss the noodles with the sauceand scallions. Serve with sesame oil, vinegar and chile pasteon the side.

Number Of Ingredients 10

8 ounces fresh wide (flat rice noodles (sen yai))
1/2 cup chicken (sliced thinly)
2 cloves garlic (chopped finely)
2 cups Chinese broccoli (chopped coarsely (with stems sliced very thinly on diagonal))
1 large egg
2 Tablespoons sweet dark soy sauce
2 Tablespoons oyster sauce
2 teaspoons thin soy sauce
2 teaspoons white vinegar
2 teaspoons sugar

Steps:

  • Prepare your sauce by mixing the sweet dark soy sauce, oyster sauce, thin soy sauce, vinegar, and sugar together. Set aside.
  • Prepare your rice noodles by blanching them in simmering water for a few seconds, as needed. Use your fingers to separate each noodle if they are stuck together.
  • Add a bit of oil to your wok and heat it to high heat. Add the garlic and saute until it's almost golden brown. Then add the chicken and saute until it's cooked through.
  • Push the garlic and chicken to the side of the wok. Add a little more oil and once it's hot, crack an egg and scramble it in the middle of the wok.
  • Push everything to the side and add the blanched rice noodles and sauce you prepared earlier. Mix everything together and stir fry until there is not much liquid left in the wok.
  • Next add the Chinese broccoli to the noodles and cook until wilted. During this time, just let the noodles sit for a minute or so to get a nice char on them. Once done, take off the heat and serve immediately!

  • In a small bowl, whisk together soy sauce, dark soy sauce, Shaoxing wine, sesame oil, sugar, and sriracha. Set aside.Bring a large pot of water to a boil. Add noodles and cook for 2 to 3 minutes or until tender. Drain and rinse under cool water.In a large skillet or wok, heat 1 tablespoon vegetable oil over medium-high until it shimmers. Add noodles and cook for 2-3 minutes, without stirring, until bottoms are slightly browned. Flip over as best you can and let cook for another 2 minutes. (Even though the noodles will not get entirely crispy, this step helps dry them out so they do not stick and absorb all the flavorful sauce.) Slide noodles onto a plate and set aside temporarily.Return skillet to medium-high heat with remaining 1 tablespoon oil. Add garlic along with white and light green parts of green onion and quickly sautée until fragrant, about 30 seconds. Return noodles to skillet along with soy sauce mixture. Toss well with a pair of tongs or chopsticks, breaking up clumps of noodles as you go, until noodles are entirely coated, about 2 to 3 minutes. Add dark green parts of green onion, carrot ribbons, and bean sprouts and cook for 1 minute more or until  just softened.Remove from heat and divide among bowls; serve immediately.
