Roasted Sweet Potatoes with Smoked Paprika-Honey Butte… image

Smoked paprika plays off the natural sweetness of the roasted sweet potatoes and gives the butter mixture a rich garnet color. Because of the sheer number of dishes available at Thanksgiving, we keep the serving size to a more modest one-half of a potato per person. You could also use small (4-oz.) sweet potatoes or cut the roasted potatoes crosswise into large pieces before drizzling with the butter mixture.

4 (8-oz.) sweet potatoes
1 teaspoon canola oil
3 tablespoons butter
2 tablespoons honey
1 tablespoon smoked paprika
2 tablespoons chopped fresh cilantro
3/4 teaspoon kosher salt

Steps:

  • Preheat oven to 400°F. Pierce sweet potatoes with a fork; rub with oil. Place potatoes on a jelly-roll pan; bake at 400°F for 1 hour or until tender. Slice potatoes in half. Combine butter, honey, and smoked paprika in a microwave-safe bowl; microwave at high 1 minute, stirring once after 30 seconds. Drizzle butter mixture evenly over potato halves. Sprinkle potato halves with cilantro and salt.

It is critical that you use smoked — not regular—paprika in this dish. Whether you use sweet or hot, you will end up with irresistible sweet potatoes.

3 pounds sweet potatoes
1/2 stick (1/4 cup) unsalted butter, cut into 1/2-inch cubes and softened
1/3 cup heavy cream
1/4 teaspoon sweet or hot smoked paprika*
1/4 teaspoon salt, or to taste
1/8 teaspoon cayenne, or to taste

Steps:

  • Put oven rack in middle position and preheat oven to 400°F.
  • Prick each potato once with a fork, then bake potatoes in a foil-lined shallow baking pan until tender, about 1 hour. When cool enough to handle, peel, then cut away any eyes or dark spots. Purée potatoes with butter, cream, paprika, salt, and cayenne in a food processor until smooth.
