Who needs Asian takeout when you can make your own crispy tilapia stir-fry in a sweet and sour sauce?

2 Hy-Vee large eggs
1 tbsp. of plus 3/4 c. Hy-Vee all-purpose flour
0.5 tsp. of Hy-Vee salt
12 oz. of tilapia fillets
0.25 c. of Hy-Vee cornstarch
3 tbsp. of Hy-Vee vegetable oil
1 tbsp. of Gustare Vita olive oil
4 clove(s) of garlic
1 green bell pepper
1 red bell pepper
1.333 c. of Hy-Vee Short Cuts chopped pineapple
1 (12.5-oz.) bottle Hy-Vee sweet & sour sauce
2 c. of white rice
0 Green onions
0 Sesame seeds

Steps:

  • 1.

    Whisk together eggs, 1 tablespoon flour, and salt. Stir in tilapia. Cover and refrigerate for 20 minutes. Combine remaining 3/4 cup flour and cornstarch in a shallow dish; set aside.

  • 2.

    Heat vegetable oil in a large skillet over medium-high heat. Drain tilapia; toss with flour and cornstarch mixture to coat. Cook fish in batches for 3 to 4 minutes or until done (145 degrees). Drain on paper towels.

  • 3.

    Heat olive oil in same large skillet over medium heat. Add garlic; cook until fragrant. Add peppers; cook until crisp-tender. Stir in pineapple, sweet and sour sauce and fish; heat through. Serve on rice. Garnish with green onions and sesame seeds, if desired.

1/4 cup ketchup
2 tablespoon reduced-sodium soy sauce
2 tablespoon white distilled vinegar
olive oil spray
3/4 pound tilapia fillets
salt and freshly ground black pepper
1 large tomato, cut into 1/2-inch cubes (1 cup)

Steps:

  • Step 1: Mix 1/4 cup ketchup, 2 tablespoons soy sauce and 2 tablespoons vinegar together in a small bowl.
  • Step 2: Set aside.
  • Step 3: Heat a medium-size nonstick skillet over medium-high heat and spray with olive oil spray.
  • Step 4: Add 3/4 pounds tilapia and saute 3 minutes for a 1/2-inch fillet.
  • Step 5: Carefully turn the fish over and saute for 2 minutes.
  • Step 6: Add salt and pepper to taste to the cooked side of the fish.
  • Step 7: Remove to a plate.
  • Step 8: Add the sauce to the skillet and cook for 30 seconds until it just starts to bubble.
  • Step 9: Spoon the sauce over the fish and spread 1 cup of diced tomatoes on top.
