I have not tried these cookies. I'm posting this recipe for safe keeping. I found this recipe in Bake The Best Ever Cookies kids cookbook. What could be better than combining your favorite taste sensations into one fantastic cookies? Absolutely nothing. Kids know the two yummiest treats in the world are chocolate and potato chips! Sarah says: If the dough is too sticky to shape into pieces, chill it in the refrigerator for about 1/2 hour before using.

Number Of Ingredients 9

1 cup softened butter or 1 cup margarine
1 cup granulated sugar (250 ML)
1 cup packed light brown sugar (250 ML)
2 eggs
6 ounces chocolate chips (1 package/170g)
9 ounces plain potato chips, crushed (1 bag/255g)
1/2 cup nuts, coarsely chopped, opt (125ML)
2 cups all-purpose flour (500 ML)
1 teaspoon baking soda (5ML)

Steps:

  • Preheat the oven to 350.
  • In a large bowl, cream together the butter, sugars, and eggs until light and fluffy, using an electric mixer. Then, stir in the chocolate chips, potato chips, nuts, and flour.
  • Shape the dough into walnut sized pieces and place on a cookie sheet.
  • Bake for 10-12 minutes or until lightly browned. Cool on a wire rack.

These chewy cookies are loaded with mix-ins and perfect for mailing to far-away friends and family.

2 cups all-purpose flour
1 teaspoon kosher salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 cup (2 sticks) unsalted butter, softened
¾ cup granulated sugar
¼ cup packed light brown sugar
1 large egg
½ teaspoon pure vanilla extract
1 cup old-fashioned rolled oats
1 cup slightly crushed mini pretzels
1 cup roughly chopped chocolate mints, such as Andes (from a 4.67-oz. pkg.)
½ cup white chocolate chips
½ cup mini marshmallows
1?½ teaspoons flaky sea salt

Steps:

  • Preheat oven to 350°F with racks in upper and lower thirds. Line 2 large, rimmed baking sheets with parchment paper. Whisk flour, kosher salt, baking powder, and baking soda in a medium bowl.
  • Beat butter, granulated sugar, and light brown sugar in a large bowl with an electric mixer on medium speed until light and fluffy, 3 to 4 minutes. Add egg and vanilla; continue beating on medium, scraping down sides of bowl as needed, until incorporated, about 1 minute. Reduce speed to low and add flour mixture, beating until dough comes together, about 1 minute. Add oats, pretzels, chocolate mints, white chocolate chips, and marshmallows, beating until combined. Using a 1½-tablespoon scoop, portion out dough onto prepared baking sheets, leaving 3 inches between each cookie.
  • Working in batches if necessary, bake cookies until lightly browned around edges (cookies will be slightly under-baked in center), 10 to 12 minutes, rotating sheets between bottom and top of oven halfway through. Sprinkle baked cookies with flaky sea salt. Let cookies cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely. Store cookies at room temperature in an airtight container for up to 5 days, or freeze for up to 1 month.

  • Place the peanut butter in a medium bowl. Sift the powdered sugar through a fine mesh strainer over top of the peanut butter. Using a rubber spatula, stir the peanut butter and sugar together to make a smooth, somewhat stiff mixture.  Spread about 1 teaspoon of the peanut butter mixture on half of the crackers. Press the wooden sticks into the peanut butter mixture, then top each with one more cracker. Press the crackers to stick them together. Place in the freezer for 20 minutes. Meanwhile, chop the chocolate bars into small, similar-sized pieces. Place in a bowl set over a pot filled with about 1” of water. (Make sure that the bowl does not touch the water). Place the pot on the stove and bring the water to a simmer over medium-low heat. Stir the chocolate occasionally, until it is melted and fluid. Transfer to a tall measuring cup, for easier dipping. Line a large baking sheet with parchment or waxed paper. Remove the pops from the freezer. Dip one pop into the melted chocolate to coat completely. Remove and let the excess chocolate drip off into the measuring cup. Place the pop on the sheet tray and immediately place four little pretzel pieces up top (the antlers), two candy eyes just below, then one red candy nose. Repeat with all of the other pops. When the chocolate is shiny and still somewhat soft, sprinkle the tops of the reindeer faces with a pinch of flaky sea salt, if you like.  Let firm up at room temperature for 30-45 minutes. Store in an air-tight container in a single layer, between layers of parchment paper, in a cool spot in your kitchen or in the refrigerator for up to 1 week.
