This healthy strawberry jam thumbprint cookie recipe is festive for the holidays with a red center and a green sugar coating. 1/2 cup clear crystal sugar, white sparkling sugar or sanding sugar (see Tips)
Natural green liquid dye (see Tips)
2 cups all-purpose flour, plus more if needed
? cup white whole-wheat flour (see Tips)
1?½ teaspoons baking powder
¼ teaspoon salt
? cup canola oil or corn oil
4 tablespoons unsalted butter, slightly softened
1/2 cup plus 1 tablespoon granulated sugar, divided
1 large egg
Finely grated zest of 1 medium lemon
1/4 cup plus 1 tablespoon honey
2?½ teaspoons vanilla extract
½ teaspoon almond extract or lemon extract
½ cup strawberry jam or preserves

Steps:

  • To prepare decorating sugar: Place sugar in a small bowl. Add a few drops of dye and stir until evenly blended. Adjust color with more dye as desired.
  • Spread the colored sugar in a thin layer on a small parchment-lined baking sheet. Turn on the oven to 350 degrees F for 2 minutes, then immediately turn it off. (The warm oven dries the sugar, but too much heat will burn it.) Let the sugar stand in the oven for 1 1/2 hours. (The sugar may be refrigerated airtight for up to 1 year.)
  • To prepare & decorate cookies: Position a rack in middle of oven; preheat to 350 degrees F. Line a large baking sheet(s) with parchment paper.
  • Whisk all-purpose flour, whole-wheat flour, baking powder and salt in a medium bowl. Beat oil, butter, sugar, egg and lemon zest in a mixing bowl with an electric mixer on low speed until well blended. Beat in honey, vanilla and almond (or lemon) extract until evenly incorporated.
  • With the mixer on low speed, then medium speed, beat about half the flour mixture into the wet ingredients until incorporated. Beat in the remaining flour mixture until just incorporated.
  • Divide the dough into quarters. Roll each quarter into a 9-inch "log." Slice the log into 12 equal pieces. Roll each piece into a ball.
  • Place the green sugar on a small plate. Roll each ball in the sugar. Place about 1 1/2 inches apart on a prepared baking sheet. Press a well into the center of each cookie with a thumb. Fill with about 1/2 teaspoon jam.
  • Bake the cookies on the center rack, one pan at a time, until firm when pressed near the edge, 8 to 12 minutes. Let stand for 5 minutes, then transfer to wire racks to cool to room temperature.

These thumbprint cookies taste just like your favorite strawberry pretzel salad! Soft Pillsbury™ sugar cookie dough, crunchy, salty pretzels, sweet strawberry jam and a tangy cream cheese drizzle combine to make a cookie that's truly irresistible any time of year.

2 1/2 cups mini pretzel twists, coarsely crushed
2 tablespoons granulated sugar
2 tablespoons butter, melted
1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough
3 oz (from 8-oz package) cream cheese, softened
1/3 cup all-purpose flour
1/3 cup seedless strawberry jam, stirred
2 oz (from 8-oz package) cream cheese, softened
1/2 cup powdered sugar
2 teaspoons milk

Steps:

  • Heat oven to 350°F. Line large cookie sheets with cooking parchment paper. In small bowl, mix crushed pretzels, granulated sugar and melted butter. Set aside.
  • In large bowl, break up cookie dough. Add 3 oz cream cheese and the flour; mix with spoon or hands until well blended. (DO NOT EAT RAW COOKIE DOUGH AFTER COMBINING WITH FLOUR.)
  • Shape dough into 38 (1 1/4-inch) balls. Roll into pretzel mixture, pressing slightly to stick. Place balls 2 inches apart on cookie sheets. Press thumb into center of each cookie to make indentation, but do not press all the way to the cookie sheet.
  • Bake 10 to 13 minutes or until edges are set and light golden brown. Immediately remake indentation in each cookie with back of teaspoon. Cool 1 minute; remove from cookie sheets to cooling racks. Spoon rounded 1/4 teaspoon jam into each indentation. Cool completely, about 30 minutes.
  • In small bowl, beat Cream Cheese Drizzle ingredients with spoon until smooth. If necessary, add more milk, 1/2 teaspoon at a time, until thin enough to drizzle. Drizzle on tops of cookies.
