Number Of Ingredients 5

2 cup(s) all purpose flour
4 teaspoon(s) baking powder
1 teaspoon(s) salt
1/4 cup(s) cold lard or vegetable shortening, cut into bits, plus more for skillet
1 cup(s) milk

Steps:

  • Whisk together flour, baking powder, and salt in a large bowl.
  • Add lard and mix in with fingers until mixture is mealy.
  • Add milk and mix until smooth dough forms.
  • Divide dough in half and work each half into 6 balls. Flatten balls to about 1/4 thick.
  • Melt one or two tablespoons lard in a medium cast iron skillet over medium-low heat.
  • Working in 2 batches, add first 6 pieces of dough to skillet and fry until brown, about 6 minutes per side. Drain on paper towels and repeat with second batch. Serve with Sausage Gravy. https://www.justapinch.com/recipes/stovetop-biscuits-with-sausage-gravy.html

What makes these biscuits special? They're made on the stovetop.

Cook Time 30 minutes

Yield 6 - 8

Number Of Ingredients 12

1 ¼ cups of self-rising flour
¼ teaspoon of salt
2 tablespoons of unsalted butter, grated (very cold)
½ cup of whole milk or buttermilk (very cold)
½ of pound breakfast sausage
2 tablespoons of butter
¼ cup of flour
2 cups of milk
½ teaspoon of salt
½ teaspoon of pepper
¼ teaspoon of red pepper flakes
1 tablespoon of parsley, chopped

Steps:

  • Combine flour and salt.
  • Grate butter into flour and toss to distribute evenly.
  • Pour in the milk and mix until just combined.
  • Roll dough out onto a floured cutting board and fold in half.  
  • Roll dough into a rectangle about ½ inch thick.  
  •  Using a mason jar lid, cut 8 biscuits. Reserve dough scraps and lightly knead the dough back together until you have 8 biscuits. 
  • Preheat an 8-inch skillet over low heat for 5 minutes.
  • Add 2 tablespoons vegetable oil along with 4 biscuits.  Cook for two minutes before flipping.  Check the biscuits and turn every two minutes for 10 to 12 minutes. If the biscuits are browning too quickly, lower the heat.  
  • Remove from heat.
  • While your biscuits are cooking, preheat another 8-inch skillet over medium heat for 5 minutes.
  • Add sausage and brown until cooked through, about 8 minutes.  
  • Remove sausage to a paper towel-lined plate. 
  •  Lower the heat to medium-low and melt butter.  Add flour and stir constantly for 3-5 minutes. 
  • Slowly whisk the milk into the flour mixture until your desired consistency is reached.  
  • Stir in salt, pepper, red pepper flakes, and sausage.
  • Remove from heat, garnish with parsley, and serve over biscuits.

SKILLET BISCUITS RECIPE - FOOD.COM
This recipe is more about the technique than the ingredients. I've added a bit more description since the first review. Making biscuits in a skillet rather than the oven is something I picked up from Joy of Cooking. It's a great alternative when you just don't want to heat up the kitchen by turning on the oven. Any rolled biscuit dough will do. NOTE: The texture may be a bit different when the biscuits are made on the stovetop, sometimes mine are a bit more dense than when baked, but they taste really good. I'm including the buttermilk biscuit recipe from Joy of Cooking, which is also wonderful and tender when rolled and baked. Yield is approximate, depending on the recipe you end up using.
