This is a true Christmas centrepiece and an essential for any traditional dinner. Simple and effective, with just five ingredients to a festive favourite

1 raw smoked gammon on the bone (about 5-6kg), rind left on
100ml maple syrup
200g apricot jam
300g light brown soft sugar
12 whole cloves

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put the ham on a wire rack or trivet set over a large roasting tin, pour in 480ml warm water and cover tightly with foil. Put the ham in the oven, immediately reduce the heat to 160C/140C fan/gas 3 and cook for 5 hrs.
  • Meanwhile, put the maple syrup, apricot jam and brown sugar in a heavy-based pan and stir in 50ml water. Bring to the boil, then remove from the heat and leave to cool.
  • Take the ham out of the oven. Increase the temperature to 200C/180C fan/gas 6. Open the foil, being careful of the hot steam. Remove the rind from the ham by inserting a sharp knife under it at the opposite end to the knuckle bone, gently lifting it away from the fat (try to keep as much fat on the leg as possible so that it will protect the ham and stop it drying out).
  • Decorate the ham by scoring the fat with a knife to make large diamond shapes, taking the knife from one corner to the other, then making parallel scores 4cm apart. Repeat in the opposite direction. Put a clove in the corner of each diamond. Brush the ham with the sugar mixture, pushing it into the scores with the brush.
  • Return the ham to the oven, placing it back on the trivet over the water. Bake for a further 45 mins until deeply coloured. Serve hot or cold. Will keep in the fridge for up to one week.

1 1/4 cups Water
1 can french onion soup
1 can chicken soup
1 package Au Jus Mix
6 Cubed Steaks
1/4 cup Water
3 tbsp cornstarch

Steps:

  • Combine 1 1/4 cups water, cream of chicken soup, Au Jus mix and French onion soup together in Instant pot. Mix well.
  • Add cubed steak to the pot.
  • Attach lid and turn valve to “Sealing” position. Set MANUAL or PRESSURE COOKto 20 mins.
  • Once it beeps (notifying you that it's ready) turn valve to “venting”. This is also known as the “quick release” The steam will be very hot so be careful when doing this. Do not remove lid until the steam has fully stopped.
  • Remove lid. Remove steak from the pan. Turn OFF the instant pot.
  • In a small bowl or cup, combine ¼ cup water and cornstarch to create a “slurry”. Pour mixture into grave mixture and whisk well.
  • Put steaks back into gravy mixture. Attach lid and leave the instant pot turned off. Keep warm until ready to serve.

  • Make the spice mix by combining the paprika, cayenne, thyme, garlic granules, onion granules and celery salt in a bowl. Season and mix to combine. Add half the spice mix to a large bowl with the buttermilk and chicken. Mix to coat the chicken, then cover and leave to marinate in the fridge overnight. Reserve the remaining spice mix. 

    Preheat the oven to 220°C/200°C fan/gas mark 6. Remove the marinated chicken from the fridge. Mix the reserved spices with the flour, and put the beaten eggs, breadcrumbs, and spiced flour in three separate bowls large enough to dip the chicken in.

    Take each piece of marinated chicken, dip in the spiced flour first, then the egg mixture, and finally in the breadcrumbs to coat thoroughly. Tap to remove excess crumbs and place on a large baking tray. Once all the chicken thighs are coated, bake in the oven for 40-50 minutes, until dark golden and cooked through.

    When the chicken has been in the oven for 15 minutes, bring 400ml water to the boil in a saucepan. Add the rice, cover and cook for 10 minutes. Remove the rice from the heat and leave to steam with the lid on for another 10 minutes.

    Remove the lid and fold through the beans, coriander, carrot, cabbage and lime juice, taste and check for seasoning. Serve the chicken with the warm rice salad.
