An indulgent pasta dish that is quick and cheap to make

350g penne pasta
1 tbsp vegetable oil
1 onion , chopped
8 rashers smoked back bacon , chopped
200ml hot vegetable stock
300g frozen pea
150g pack gorgonzola , cubed
250g spinach

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 mins until starting to soften. Add the bacon, cook for a further 5 mins, then pour in the hot stock and bring to the boil. Simmer for a few mins until the liquid has reduced slightly.
  • Stir in the peas, followed by the gorgonzola, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.

9 ounces Whole Grain Pasta (such as penne)
salt
0.5 cup Vegetable broth
8 ounces Spinach (frozen)
3 ounces Gorgonzola
5 ounces Soy creamer
peppers
Nutmeg
2 teaspoons red peppercorns

Steps:

  • Cook pasta in plenty of boiling salted water according to package directions until al dente.
  • Meanwhile, boil vegetable broth in another pot and add the frozen spinach. Cover and simmer over medium heat until the spinach is thawed, stirring occasionally.
  • Remove rind from Gorgonzola, dice and add to spinach. Stir and cook until melted.
  • Stir in soy creamer and season with salt and pepper. Season to taste with a little nutmeg grated directly into the sauce.
  • Drain pasta and place on 2 plates. Top with spinach and Gorgonzola sauce. Sprinkle with peppercorns and serve immediately.
