Yield 12

Number Of Ingredients 12

1 wide loaf of bread
8 oz. cream cheese, softened
1/3 c. sour cream
1/3 c. mayonnaise
1 can artichoke hearts, drained and chopped
1 10-oz. package frozen spinach, thawed and chopped
2 cloves garlic, minced
1 c. shredded mozzarella, divided
1/2 c. freshly grated Parmesan
pinch of crushed red pepper flakes
kosher salt
Freshly ground black pepper

Steps:

  • Preheat oven to 350°. Slice off the top 1/2" of the bread and hollow out the inside of the bread to create a bowl. (Save insides and top slice for snacking.) In a large bowl, combine cream cheese, sour cream, mayonnaise, artichokes, spinach, garlic, 3/4 cup mozzarella, and Parmesan. Add red pepper flakes and season with salt and pepper. Spoon the mixture into the bread bowl until filled to brim, then sprinkle with remaining mozzarella. Place on baking sheets and bake until dip is warm and bubbly, 28 to 30 minutes. Dip bread scraps in any leftover spinach-artichoke dip while the stuffed bread bakes. Slice stuffed loaf and serve.

Total Time 40 minutes

Prep Time 20 minutes

Cook Time 20 minutes

Yield 20

Number Of Ingredients 7

1 french baguette
1/2 tablespoon olive oil
4 cloves garlic, minced
14 ounces artichoke hearts, drained and chopped
4 cups baby spinach leaves
1 8 ounce package cream cheese
1 1/2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 350°F. Cut baguette into 3 even sections. Using a long knife, hollow out the inside of the baguette, removing the bread from inside but being sure to leave some bread along the edges. Set aside. In a large skillet set over medium heat, heat olive oil. Add garlic, artichoke hearts and spinach. Heat, stirring often until spinach has wilted. Add cream cheese and mozzarella cheese. Stir and allow the cheese to melt, stirring constantly. Once completely melted, remove from heat. Using a small spoon, fill each piece of hollow baguette with the artichoke cheese mixture. Line the filled bread pieces on a cutting board and gently cut into 1-inch pieces. Carefully keeping the baguette together, transfer the sliced baguette to a large long piece of foil and wrap. Place the baguette onto a baking sheet and bake in preheated oven for 20 minutes. Remove from oven and serve warm.
