This is a light pasta salad, very refreshing on a hot day.

1 cup uncooked rotini
½ bunch Swiss chard (silverbeet), stems removed and thinly sliced
1 red bell pepper, seeded and chopped
¼ cup vinaigrette salad dressing

Steps:

  • Bring a saucepan of water to a boil. Add the rotini pasta, and cook for 8 minutes, or until tender. Drain, and rinse under cold water to cool.
  • In a medium bowl, toss together the rotini, Swiss chard, and bell pepper. Pour in dressing sparingly until you reach your desired amount.

Easy vegetarian potato and silverbeet bake | Food To Love image

Nici Wickes shares her mum's potato and silverbeet bake recipe. This dish is a delicious way to take care of the vege content of a meal as well as the surplus of greens in the garden

1 kilogram mashing potatoes
50 gram butter, plus extra for greasing the dish
pinch of nutmeg (optional)
1/2 teaspoon salt and a decent grind of pepper
150 gram silverbeet, stalk removed, finely chopped

Steps:

  • Preheat the oven to 150°C. Liberally grease a shallow casserole dish with butter.
  • Boil the potatoes in salty water until well cooked. Drain well and allow the steam to dry off. Roughly smash with a fork (as opposed to mashing). Stir in half the butter, then the nutmeg, salt and pepper.
  • Spoon half the potato into the dish and cover with the chopped silverbeet. It will be springy and piled high, but will compress as it cooks, so press it down lightly, then cover with the remaining smashed potato. Dot the top with the remaining butter.
  • Bake for 35-45 minutes. At this point, the top should be brown and slightly crispy.
  • Serve this dish as a side to a main meal. It’s great with grilled lamb chops, steak or grilled salmon.

    2. To your empty pan add 4 large lugs of olive oil and the garlic. Fry the garlic until lightly coloured, then throw in your cooked chicory and silverbeet. Season and stir around to coat in all the lovely flavoured oil.
    3. After 1 minute, remove from the heat, add the rocket and squeeze in the lemon juice. Stir once more, check the seasoning again, and serve immediately. Great with grilled meats or scallops, or even served cold on an antipasti plate.
