Prep Time 30 minutes

Yield Serves 4

Number Of Ingredients 15

1 tbsp sunflower oil
340g British beef or pork mince
2 garlic cloves, crushed
1 red chilli, thinly sliced
1 tbsp Chinese five spice powder
2 tsp sichuan peppercorns, crushed
1 tbsp light brown muscovado sugar
2 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp crunchy peanut butter
2 pak choi, halved
400g cooked flat rice noodles (or use straight to wok noodles)
2 spring onions, finely chopped
Small handful fresh coriander leaves, chopped
Handful peanuts, chopped

Steps:

  • Heat a large non-stick pan or wok over a medium heat with 1⁄2 tbsp oil, add the mince and fry for 5-6 minutes until well browned and any liquid has cooked off. Stir in the garlic, chilli, five spice, sichuan peppercorns and sugar. Cook until sizzling and combined. Put on a plate and keep warm. Keep the pan.
  • In a small bowl, whisk the hoisin, soy and peanut butter with 100ml water to create a smooth sauce.
  • Heat the remaining oil in the pan and, when smoking hot, add the pak choi and fry until just tender. Add the noodles and peanut sauce, then fry until the noodles are warmed through and the sauce is bubbling.
  • Serve the noodles in bowls topped with the warm spiced meat, sprinkled with the spring onions, coriander and peanuts.

TAKEOUT-STYLE SESAME NOODLES RECIPE - NYT COOKING
Noodles dressed with sesame are popular in many parts of China, but this particular style, made with peanut butter and served cold, became a Chinese-American staple in the United States in the 1970s. The family of Shorty Tang — an ambitious restaurateur who emigrated from Sichuan to Taipei to New York — firmly believes that he invented the dish and still serve it at Hwa Yuan, the restaurant he opened in 1967 in Manhattan’s Chinatown. They have never divulged the exact recipe; this is our own lush but refreshing version.

COLD SOBA NOODLES WITH DIPPING SAUCE RECIPE - NYT COOKING
In Japan, where it gets plenty hot in the summer, cold soba noodles, served with a dipping sauce, are a common snack or light meal. Soba are brown noodles, made from wheat and buckwheat, and the sauce is based on dashi, the omnipresent Japanese stock. You would recognize the smell of dashi in an instant, even if you have never knowingly eaten it. It's a brilliant concoction based on kelp, a seaweed and dried bonito flakes. It is also among the fastest and easiest stocks you can make, and its two main ingredients – which you can buy in any store specializing in Asian foods – keep indefinitely in your pantry. I would encourage you to try making it, though you can also use chicken stock (or instant dashi, which is sold in the same stores).

  • Combine dashi or stock, soy sauce and mirin. Taste, and add a little more soy if the flavor is not strong enough. Serve noodles with garnishes, with sauce on side for dipping (or spooning over).
