I got this recipe off of The Food Network after watching Paula prepare it on her show. It is delicious! Although the original recipe didn't call for cheese, I sometimes add some between the meat and Bisquick layers. Rich and decadent! Recipe courtesy of http://www.pauladeen.com

Number Of Ingredients 10

1 small onion
1 and 1/2 pound(s) ground beef
2 - 8 oz cans tomato sauce
1 and 1/2 cup(s) mixed vegetables of your choice
- salt and pepper to taste
8 - 10 medium medium red new potatoes
1 and 1/2 cup(s) milk
12 tablespoon(s) butter
1/2 cup(s) sour cream
2 cup(s) biscuit mix (bisquick)

Steps:

  • Pre-heat oven to 350 degrees.
  • Beef Layer: Chop and saute onion in 2 tablespoons butter. Add ground beef. After beef is browned, add tomato sauce; mix in vegetables (except potatoes). Add salt and pepper to taste.
  • Potato Layer: Peel and slice potatoes about 1/4 inch thick. Cook in boiling water for about 15 minutes, or until potatoes are fork tender. Whip potatoes with electric mixer until moderately smooth - a few lumps are okay. Heat to warm 1/2 cup of the milk and add to potatoes, along with 1/2 cup butter and the sour cream. Add salt and pepper to taste. Whip til mixed, adding a little more milk, if needed, for the desired consistency.
  • Biscuit Layer: Mix Bisquick and one cup milk. The mixture should be thinner than regular buscuit mix, but not runny.
  • Spray a 9 by 9 by 2-inch (or similar) baking pan with cooking spray. Layer half-way up with the mashed potatoes. Next, spread the mixed vegetables over the potatoes, then the meat. Pour Bisquick over the meat. Melt 4 tablespoons butter and drizzle over top.
  • Bake for 35 - 45 minutes until top is golden brown.
  • If you have leftover pork or beef roast with gravy and vegetables from Sunday dinner, they can be used to make this a quick nd easy mid-week dinner!

1 1/2 lbs lean ground beef
1 cup diced carrot
1/2 cup diced celery
1/4 cup diced onion
1 cup diced green beans (I used fresh but you can use frozen or canned)
1/4 teaspoon black pepper
1/2 teaspoon granulated garlic
1 1/2 cups prepared beef gravy
2 1/2 cups mashed potatoes
1/2 cup shredded monterey jack and cheddar cheese blend

Steps:

  • Scramble the ground beef in a large skillet.
  • Add the onions, celery, green beans and carrots and heat for about three minutes.
  • Sprinkle the black pepper and granulated garlic over the mixture and stir inches.
  • Continue heating on medium-low heat until the veggies start to soften.
  • I cooked about 10 to 12 minutes.
  • Add the prepared brown gravy and stir.
  • Mixture should be thick. If the mixture is runny add 1 TBS of flour and stir in and heat till bubbly.
  • Remove from heat and pour into a casserole dish sprayed with a cooking spray.
  • Pour the meat and veggie mixture into the dish.
  • Top by spoonfuls with the mashed potatoes. Slightly smash and spread the potatoes out.
  • Top with cheese and bake in the oven at 400* for about 16 minutes. Cheese will be complete melted.

  • Heat a large skillet (I prefer nonstick here) over medium high heat, then add beef. Brown beef until fully cooked, about 5 minutes (I find there’s enough fat released in the beef that I don’t need to add oil to the pan). Soak up excess beef fat with a paper towel, then add onion and carrot. Season with a pinch of salt and pepper, then cook for 10 minutes, until soft.Add the peas and corn, and cook for 2 minutes. Add butter to the pan and toss around until fully melted, then stir in flour, thyme leaves, and garlic. Stir for 1 minute, until flour disappears. Add beef stock, then bring liquid to a boil over high heat. Cook for a minute or two until broth thickens into a light sauce. Remove pan from heat and transfer beef and veggie mixture to an 8x8 baking dish.Preheat oven to 425ºF.To make the mashed potatoes, place cubed potatoes in a pot filled with cold water. Place on the stove set over high heat and bring to a boil. Cook for about 5 minutes, until potato cubes are fork-tender. Drain potatoes, then spread them out on a sheet pan in a single layer and let sit for a couple minutes so the steam can escape. Use a fork or potato masher to mash the potatoes, then stir in cream, milk, butter, and cheese. Make any necessary seasoning adjustments with salt and pepper. Spread mashed potatoes on top of the beef and veggies in the 8x8 baking dish.Bake shepherd’s pie for 20–25 minutes, until mashed potatoes are golden brown and crispy on top. Serve and enjoy!Freezer Instructions: After baking, let pan cool to room temperature, then cover tightly with foil and place in the freezer for up to 2 months. When ready to eat, reheat the shepherd's pie (still covered with the foil) for 1 hour in a 350ºF oven. If you thaw the pie in the fridge the night before, you can cut that time in half.
