1 Muffin tin (12-cup)
12 Baking cups
75 grams Raspberries
1 egg
80 milliliters vegetable oil
130 grams sugar
1 pinch salt
50 grams Double cream cheese (60-75% fat)
220 milliliters Buttermilk
250 grams Pastry flour
2 teaspoons Baking powder
0.5 teaspoon baking soda
150 grams butter
100 grams powdered sugar
250 grams cream cheese
1 tablespoon Rose syrup
1 teaspoon Rose water
Sugar blossom (finished product)
Sugar pearls

Steps:

  • For baking, preheat the oven to 180°C (approximately 350°F). Place the paper liners in muffin tin. For cupcakes, rinse the raspberries and drain on paper towels. Whisk the egg with the vegetable oil, sugar, a pinch of salt, cream cheese and buttermilk. Combine the flour, baking powder and baking soda in a mixing bowl. Stir the buttermilk mixture into the flour mixture until just combined. Fill the muffin tins halfway with batter. Top each with 1-2 raspberries. Pour the remaining batter over the raspberries. Bake for 25 minutes. Let the cupcakes cool on a wire rack. 
  • For decorating, beat the butter with the powdered sugar until white and creamy. Beat in the cream cheese, rose syrup and rose water. Transfer to a piping bag and evenly spread over the cupcakes. Garnish with sugar flowers and pearls before serving.

Transfer to wire rack and let cool. Tint buttercream desired colors. Fit pastry bag with large star tip and fill with colored buttercream. Frost cupcakes, then decorate with flowers.
